Fresh Apple Cake

This Fresh Apple Cake is a moist and tender dessert loaded with chunks of fresh apples and warm spices. Perfectly sweetened and with a hint of cinnamon, this cake is ideal for autumn gatherings, holiday celebrations, or simply as a cozy treat with your morning coffee. Serve it plain, with a drizzle of caramel, or a dollop of whipped cream for extra indulgence.


Ingredients:

  • 2 cups all-purpose flour
  • 1 1/2 teaspoons baking soda
  • 1/2 teaspoon salt
  • 1 teaspoon ground cinnamon
  • 1/2 teaspoon ground nutmeg
  • 1/2 cup unsalted butter, softened
  • 1 1/2 cups granulated sugar
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 1/4 cup milk (whole or 2%)
  • 2 cups peeled and chopped fresh apples (about 2 medium apples)
  • 1/2 cup chopped pecans or walnuts (optional)

Optional Glaze:

  • 1/2 cup powdered sugar
  • 2-3 tablespoons milk
  • 1/4 teaspoon vanilla extract

Instructions:

  1. Preheat the Oven: Preheat your oven to 350°F (175°C). Grease and flour a 9×13-inch baking dish or a 9-inch bundt pan.
  2. Mix the Dry Ingredients: In a medium bowl, whisk together the flour, baking soda, salt, cinnamon, and nutmeg.
  3. Cream the Butter and Sugar: In a large bowl, beat the butter and sugar together until light and fluffy. Add the eggs one at a time, mixing well after each addition. Stir in the vanilla extract.
  4. Combine the Ingredients: Gradually add the dry ingredients to the wet ingredients, alternating with the milk, beginning and ending with the dry ingredients. Mix until just combined. Fold in the chopped apples and nuts (if using).
  5. Bake: Pour the batter into the prepared pan and spread evenly. Bake for 40-50 minutes, or until a toothpick inserted into the center comes out clean.
  6. Cool and Glaze (Optional): Let the cake cool in the pan for 10 minutes, then transfer it to a wire rack to cool completely. If desired, whisk together the glaze ingredients and drizzle over the cooled cake.
  7. Serve: Slice and enjoy as-is or with a drizzle of caramel sauce or whipped cream.
