  • 3 large croissants (preferably a day old)

  • 1 teaspoon baking powder

Instructions

Step 1: Prepare the Croissants

  • Slice each croissant into bite-sized pieces or strips. If you prefer a more traditional beignet shape, cut them into squares.

Step 2: Make the Batter

  • In a mixing bowl, whisk together the eggs, milk, sugar, vanilla extract, cinnamon (if using), baking powder, and salt.
  • Gradually add the flour, stirring until you have a smooth, slightly thick batter.

Step 3: Heat the Oil

  • In a deep pan or fryer, heat about 2 inches of vegetable oil to 350°F (175°C).
  • To check if the oil is ready, drop a small amount of batter in—it should sizzle and rise to the top immediately.

Step 4: Fry the Croissant Pieces

  • Dip each croissant piece into the batter, ensuring it’s well-coated.
  • Carefully place a few pieces at a time into the hot oil. Fry for 1-2 minutes per side, until golden brown and crispy.
  • Use a slotted spoon to remove them and drain on paper towels.

Step 5: Dust & Serve

  • While still warm, generously dust the fried croissant beignets with powdered sugar.
  • Serve immediately with honey, jam, or a drizzle of chocolate sauce for extra indulgence!
