Ingredients (Makes 16 brownies)

  • 1 cup (226g) unsalted butter
  • 8 oz (226g) semi-sweet chocolate, chopped
  • 1 1/4 cups (250g) granulated sugar
  • 3/4 cup (150g) brown sugar, packed
  • 4 large eggs, room temperature
  • 2 teaspoons vanilla extract
  • 1/2 teaspoon espresso powder (optional)
  • 3/4 cup (95g) all-purpose flour
  • 1/4 cup (25g) unsweetened cocoa powder
  • 1/2 teaspoon salt

Instructions

  1. Preheat Oven:
    Preheat your oven to 350°F (175°C). Line a 9×9-inch square baking pan with parchment paper, leaving an overhang for easy removal.
  2. Melt Butter and Chocolate:
    In a medium saucepan, melt the butter and chopped chocolate over low heat, stirring until smooth. Remove from heat and let cool slightly.
  3. Mix Sugars and Eggs:
    In a large mixing bowl, whisk together the granulated sugar, brown sugar, and eggs until thick and pale, about 2-3 minutes. Stir in the vanilla extract and espresso powder (if using).
  4. Combine with Chocolate Mixture:
    Gradually add the melted chocolate mixture to the sugar-egg mixture, stirring until fully combined.
  5. Add Dry Ingredients:
    Sift in the flour, cocoa powder, and salt. Gently fold the dry ingredients into the wet ingredients until just combined. Avoid overmixing to keep the brownies fudgy.
  6. Pour Batter into Pan:
    Spread the brownie batter evenly into the prepared pan.
  7. Bake:
    Bake for 30-35 minutes, or until a toothpick inserted into the center comes out with moist crumbs (not wet batter).
  8. Cool and Serve:
    Let the brownies cool completely in the pan before lifting them out using the parchment overhang. Slice into squares and serve!
