Made in one pan, packed with bold, savory flavor, and done in under 30 minutes — it’s a comforting, hearty, and family-approved dish perfect for busy nights.


Description

This recipe is the ultimate marriage of crispy potatoes and juicy steak. The potatoes are golden and tender, the steak is seared to perfection, and it’s all tossed in a luscious garlic butter sauce that takes the flavor over the top. It’s quick, satisfying, and made with pantry staples, yet it tastes like something you’d get at a steakhouse.

Perfect for weeknights, date nights, or impressing guests without breaking a sweat, this dish is a go-to when you need something that hits all the right notes: savory, garlicky, buttery, and hearty.


Ingredients (Serves 4–5)

For the potatoes:

  • 1 1/2 pounds baby potatoes, halved or quartered
  • 2 tablespoons olive oil
  • 1 teaspoon garlic powder
  • 1 teaspoon paprika
  • Salt and pepper, to taste

For the steak bites:

  • 1 1/2 pounds sirloin steak, cut into 1-inch cubes
  • Salt and pepper, to taste
  • 1 tablespoon olive oil
  • 3 tablespoons unsalted butter
  • 5 garlic cloves, minced
  • 1 tablespoon chopped fresh parsley (optional)
  • 1 teaspoon fresh thyme or 1/2 teaspoon dried thyme (optional)

Instructions

1. Cook the potatoes

  • Heat 2 tablespoons olive oil in a large skillet over medium-high heat.
  • Add the potatoes, season with garlic powder, paprika, salt, and pepper.
  • Cook for 12–15 minutes, stirring occasionally, until golden and fork-tender.
  • Transfer to a plate and keep warm.

2. Sear the steak bites

  • Pat steak cubes dry with a paper towel and season with salt and pepper.
  • In the same skillet, add 1 tablespoon olive oil over high heat.
  • Add steak in a single layer (in batches if needed). Sear for 1–2 minutes per side until browned but not overcooked. Remove and set aside.

3. Make the garlic butter sauce

  • Reduce heat to medium. In the same pan, melt butter.
  • Add garlic and thyme; sauté for about 1 minute, stirring constantly to avoid burning.

4. Combine and serve

  • Return the steak bites and potatoes to the skillet.
  • Toss everything to coat in the garlic butter.
  • Sprinkle with fresh parsley and serve hot.
