Ingredients

For the Skillet:

  • 500g chicken breast or thighs, cut into bite-sized pieces
  • 2 tablespoons olive oil
  • 1 small onion (100g), finely chopped
  • 3 cloves garlic, minced
  • 500g potato gnocchi (store-bought or homemade)
  • 250ml chicken broth
  • 250ml heavy cream
  • 50g grated Parmesan cheese
  • 1 teaspoon Italian seasoning
  • ½ teaspoon red pepper flakes (optional, for heat)
  • ½ teaspoon salt
  • ¼ teaspoon black pepper
  • 100g baby spinach (optional, for extra greens)
  • 1 tablespoon butter (for extra richness)

For Garnishing:

  • Fresh parsley, chopped
  • Extra Parmesan cheese
  • Freshly cracked black pepper

Instructions

Step 1: Cook the Chicken

  1. Heat 1 tablespoon olive oil in a large skillet over medium-high heat.
  2. Add the chicken pieces, season with salt and black pepper, and cook until golden brown and fully cooked (5–7 minutes). Remove from the pan and set aside.

Step 2: Sauté Aromatics

  1. In the same skillet, add 1 more tablespoon of olive oil and sauté the onion until softened (2–3 minutes).
  2. Add the minced garlic and cook for another 30 seconds until fragrant.

Step 3: Cook the Gnocchi

  1. Add the uncooked gnocchi to the skillet along with chicken broth.
  2. Stir well and let the broth simmer, allowing the gnocchi to absorb the flavors and soften (5 minutes).

Step 4: Make the Creamy Garlic Sauce

  1. Reduce the heat to medium-low and stir in heavy cream, Parmesan cheese, Italian seasoning, red pepper flakes, and butter.
  2. Mix until the cheese melts and the sauce becomes thick and creamy.

Step 5: Combine Everything

  1. Return the cooked chicken to the skillet and stir everything together.
  2. If using baby spinach, add it now and let it wilt for 1–2 minutes.
