Garlic Parmesan Chicken and Potatoes Skillet

This garlic Parmesan chicken and potatoes skillet is a complete meal packed with tender chicken, crispy potatoes, and a rich, garlicky Parmesan sauce. Ready in just 30 minutes, it’s the perfect dish for busy weeknights or when you crave a comforting, hearty dinner with minimal cleanup.


Ingredients

  • 1 lb boneless, skinless chicken breasts or thighs, cut into bite-sized pieces
  • 1 lb baby potatoes, halved (or quartered if large)
  • 3 tbsp olive oil, divided
  • 1 tsp paprika
  • 1/2 tsp garlic powder
  • 1/2 tsp salt
  • 1/4 tsp black pepper
  • 4 garlic cloves, minced
  • 1/2 cup chicken broth
  • 1/4 cup heavy cream
  • 1/3 cup grated Parmesan cheese
  • 1 tbsp chopped fresh parsley (for garnish)

Instructions

  1. Prepare the Potatoes:
    • Heat 2 tablespoons of olive oil in a large skillet over medium-high heat. Add the potatoes and season with paprika, garlic powder, salt, and pepper. Cook for 12-15 minutes, stirring occasionally, until golden brown and tender. Remove from the skillet and set aside.
  2. Cook the Chicken:
    • In the same skillet, heat the remaining olive oil. Add the chicken pieces and cook for 5-7 minutes, stirring occasionally, until browned and fully cooked. Remove from the skillet and set aside with the potatoes.
  3. Make the Sauce:
    • Lower the heat to medium and add minced garlic to the skillet. Sauté for 30 seconds until fragrant. Pour in the chicken broth and heavy cream, scraping up any browned bits from the bottom of the skillet. Simmer for 2-3 minutes.
  4. Add Parmesan and Combine:
    • Stir in Parmesan cheese until melted and smooth. Return the chicken and potatoes to the skillet, tossing to coat in the sauce. Cook for 2-3 minutes until heated through.
  5. Serve:
    • Garnish with fresh parsley and serve warm.

Tips for the Best Skillet Meal

  • Crispy potatoes: For extra crispiness, don’t stir the potatoes too often while they cook.
  • Fresh Parmesan: Use freshly grated Parmesan for the best flavor and texture in the sauce.
  • Add veggies: Include green beans, spinach, or asparagus for a pop of color and nutrients.
