Ginger Molasses Sandwich Cookies with Eggnog Frosting

These Ginger Molasses Sandwich Cookies are soft and chewy, bursting with warm spices, and paired with a luscious eggnog frosting. The ultimate holiday treat that’s as indulgent as it is festive!


Ingredients

Cookies:

  • 2 ¼ cups all-purpose flour
  • 1 tsp baking soda
  • 1 tsp ground cinnamon
  • 1 tsp ground ginger
  • ½ tsp ground cloves
  • ¼ tsp salt
  • ¾ cup unsalted butter, softened
  • 1 cup granulated sugar
  • ¼ cup molasses
  • 1 large egg
  • ½ cup granulated sugar (for rolling)

Eggnog Frosting:

  • ½ cup unsalted butter, softened
  • 2 cups powdered sugar
  • 2 tbsp eggnog
  • ½ tsp vanilla extract
  • ¼ tsp ground nutmeg

Instructions

  1. Prepare the Dough:
    • In a medium bowl, whisk together flour, baking soda, cinnamon, ginger, cloves, and salt.
    • In a large bowl, cream butter and sugar until light and fluffy. Beat in molasses and the egg until well combined. Gradually add the dry ingredients, mixing until just combined. Cover and chill the dough for at least 1 hour.
  2. Bake the Cookies:
    • Preheat your oven to 350°F (175°C) and line baking sheets with parchment paper.
    • Roll the dough into 1-inch balls and coat in the additional sugar. Place on the baking sheets about 2 inches apart.
    • Bake for 8–10 minutes, or until the edges are set and the tops are cracked. Let cool on the baking sheets for 5 minutes before transferring to a wire rack to cool completely.
  3. Make the Eggnog Frosting:
    • In a medium bowl, beat butter until creamy. Gradually add powdered sugar, eggnog, vanilla, and nutmeg, mixing until smooth and fluffy.
  4. Assemble the Sandwich Cookies:
    • Spread or pipe a generous amount of eggnog frosting onto the bottom of one cookie, then sandwich it with another cookie. Repeat with the remaining cookies.
  5. Serve:
    • Enjoy immediately, or store in an airtight container in the refrigerator for up to 5 days.

Notes

  • For an extra festive touch, dust the assembled cookies with powdered sugar or sprinkle with additional nutmeg.
  • To freeze, wrap individual cookies in plastic wrap and store in an airtight container for up to 2 months. Thaw before serving.
  • Swap eggnog frosting for cream cheese frosting if desired.
