Gluten-Free Lasagna Soup

March 8, 2025 by el hassan Leave a Comment

Craving the rich, cheesy, and comforting flavors of lasagna without the hassle of layering and baking? This Gluten-Free Lasagna Soup is the answer! It’s everything you love about classic lasagna—savory tomato sauce, hearty meat, creamy ricotta, and gooey melted cheese—all in an easy, one-pot soup that’s perfect for a cozy meal.

The best part? This soup is completely gluten-free without sacrificing any flavor. Instead of traditional lasagna noodles, we use gluten-free pasta to keep it safe for those with celiac disease, gluten sensitivity, or anyone wanting a lighter version of the classic dish.

Perfect for weeknight dinners, meal prep, or feeding a crowd, this soup is rich, satisfying, and full of Italian-inspired flavors. Plus, it’s ready in under an hour, making it a must-try for busy days!

Why You’ll Love This Gluten-Free Lasagna Soup

✅ All the flavors of lasagna in a bowl – No layering or baking required!
✅ Completely gluten-free – Uses gluten-free pasta for a safe, delicious alternative.
✅ One-pot meal – Less cleanup and full of rich, comforting flavors.
✅ Customizable – Make it vegetarian, dairy-free, or add extra protein!
✅ Perfect for meal prep – Stores and reheats beautifully for easy lunches or dinners.

Ingredients (in grams)

For 6 servings, you’ll need:

For the Soup Base:

  • 500g ground beef (or Italian sausage)
  • 1 small onion, diced (about 100g)
  • 3 cloves garlic, minced
  • 1 teaspoon (5g) salt
  • ½ teaspoon (2g) black pepper
  • 1 teaspoon (2g) Italian seasoning
  • ½ teaspoon (1g) red pepper flakes (optional for heat)
  • 800g crushed tomatoes (canned)
  • 400g diced tomatoes (canned)
  • 1 liter (1000ml) gluten-free beef or vegetable broth
  • 2 tablespoons (30g) tomato paste
  • 1 teaspoon (5g) balsamic vinegar (optional, for depth of flavor)
  • 2 bay leaves

For the Pasta:

  • 200g gluten-free lasagna noodles, broken into bite-sized pieces (or any gluten-free pasta of choice)

For the Cheese Topping:

  • 150g ricotta cheese (or dairy-free alternative)
  • 100g shredded mozzarella cheese
  • 50g grated Parmesan cheese
  • 1 tablespoon (5g) fresh basil, chopped (for garnish)

Instructions

Step 1: Cook the Meat & Aromatics

  1. Heat a large Dutch oven or soup pot over medium heat.
  2. Add the ground beef (or sausage) and cook until browned, breaking it apart with a spoon.
  3. Drain any excess fat, then stir in the onion and garlic, cooking for about 3 minutes until softened.

Step 2: Build the Soup Base

  1. Stir in salt, pepper, Italian seasoning, and red pepper flakes (if using).
  2. Add crushed tomatoes, diced tomatoes, broth, tomato paste, balsamic vinegar, and bay leaves.
  3. Bring to a gentle simmer and let cook for 20 minutes, stirring occasionally.

Step 3: Cook the Gluten-Free Pasta

  1. Add the broken gluten-free lasagna noodles directly into the soup.
  2. Let them cook according to package instructions (typically 8-12 minutes), stirring often to prevent sticking.
  3. Remove the bay leaves and adjust seasoning if needed.

Step 4: Prepare the Cheese Topping

  1. While the soup is simmering, mix together ricotta, shredded mozzarella, and Parmesan cheese in a small bowl.

Step 5: Serve & Enjoy

  1. Ladle the soup into bowls and top with a spoonful of the cheese mixture.
  2. Garnish with fresh basil and extra Parmesan.
  3. Serve immediately and enjoy this cozy, comforting bowl of lasagna soup! ????????

Tips & Tricks for the Best Gluten-Free Lasagna Soup

✔️ Choose the Right Gluten-Free Pasta – Some gluten-free pastas can get mushy. Opt for brown rice, chickpea, or lentil-based pasta for the best texture.

✔️ Cook Pasta Separately for Meal Prep – If you’re making this soup for later, cook the pasta separately and add it when reheating to prevent it from getting too soft.

✔️ Make It Dairy-Free – Use vegan ricotta and mozzarella for a completely dairy-free version.

✔️ Add More Protein – Stir in cooked ground turkey, shredded chicken, or even lentils for an extra protein boost.

✔️ For a Thicker Soup – Reduce the broth slightly or add a cornstarch slurry (1 tablespoon cornstarch + 2 tablespoons water) at the end of cooking.

Variations to Try

???? Vegetarian Lasagna Soup – Swap the meat for mushrooms, zucchini, or eggplant for a hearty, meatless version.

???? Spicy Lasagna Soup – Add extra red pepper flakes or hot Italian sausage for a kick!

???? Pesto Lasagna Soup – Stir in a spoonful of basil pesto at the end for extra depth of flavor.

???? Creamy Lasagna Soup – Add ½ cup heavy cream or coconut milk for a richer soup.

What to Serve with Gluten-Free Lasagna Soup

???? Gluten-Free Garlic Bread – A must-have for soaking up all that delicious broth!

???? Simple Green Salad – A fresh, crisp salad balances the rich soup flavors.

???? Roasted Vegetables – Try roasted zucchini, bell peppers, or asparagus for extra veggies.

???? A Glass of Red Wine – Pair with a smooth Chianti, Merlot, or Cabernet Sauvignon for an Italian-inspired meal.

How to Store & Reheat

???? Store – Keep leftovers in an airtight container in the fridge for up to 4 days.

???? Reheat – Warm on the stovetop over medium heat, adding a little broth if needed.

❄️ Freeze – Freeze without the pasta for up to 2 months. When ready to serve, thaw, reheat, and add fresh-cooked pasta.
