Good Ole Fashion Mac and Cheese

This classic mac and cheese recipe is the ultimate comfort food! With creamy, cheesy goodness and a golden, bubbly top, it’s a simple, crowd-pleasing dish that never goes out of style. Perfect as a main dish or side, it’s a must-have on your table.


Ingredients

For the Cheese Sauce:

  • 3 tbsp unsalted butter
  • 3 tbsp all-purpose flour
  • 3 cups whole milk (warm)
  • 1/2 tsp garlic powder
  • 1/4 tsp smoked paprika (optional)
  • Salt and black pepper, to taste
  • 2 1/2 cups shredded sharp cheddar cheese
  • 1/2 cup shredded Gruyere cheese (or Parmesan)

For the Pasta:

  • 12 oz elbow macaroni (or your favorite pasta)

For the Topping (Optional):

  • 1/2 cup panko breadcrumbs
  • 2 tbsp unsalted butter, melted

Instructions

  1. Cook the Pasta:
    • Bring a large pot of salted water to a boil. Cook the elbow macaroni according to package directions until al dente. Drain and set aside.
  2. Make the Roux:
    • In a large saucepan, melt the butter over medium heat. Whisk in the flour and cook for 1-2 minutes, stirring constantly, until it forms a smooth paste (roux).
  3. Add Milk and Seasonings:
    • Gradually whisk in the warm milk, ensuring no lumps form. Add garlic powder, smoked paprika (if using), salt, and pepper. Cook for 4-5 minutes, stirring constantly, until the sauce thickens.
  4. Add Cheese:
    • Reduce the heat to low. Stir in the shredded cheddar and Gruyere cheese, a handful at a time, until melted and smooth.
  5. Combine with Pasta:
    • Add the cooked pasta to the cheese sauce and stir until fully coated.
  6. Optional Baking:
    • Preheat your oven to 375°F (190°C). Transfer the mac and cheese to a greased baking dish.
    • In a small bowl, mix panko breadcrumbs with melted butter and sprinkle over the top. Bake for 15-20 minutes, or until the topping is golden and bubbly.
  7. Serve:
    • Serve hot and enjoy the creamy, cheesy goodness!

Tips for the Best Mac and Cheese

  • Use Freshly Grated Cheese: Pre-shredded cheese contains anti-caking agents that can make the sauce grainy.
  • Experiment with Cheeses: Add mozzarella, Monterey Jack, or Pepper Jack for extra creaminess or a twist of flavor.
  • Don’t Overcook Pasta: Slightly undercook the pasta before mixing with the cheese sauce to prevent it from becoming mushy.
  • Customize the Topping: Add Parmesan, crispy bacon, or fresh herbs to the breadcrumbs for added flavor.
