Ingredients (Serves 8–10)

For the Pie Crust (Homemade or Store-Bought):

  • All-purpose flour – 250g (2 cups)
  • Unsalted butter, cold & cubed – 115g (½ cup)
  • Granulated sugar – 1 tablespoon
  • Salt – ½ teaspoon
  • Ice water – 60ml (4 tablespoons)

(Or use 1 pre-made 9-inch pie crust for convenience!)

For the Gooey Brownie Filling:

  • Dark chocolate (70% cocoa or higher), chopped – 200g (7 oz)
  • Unsalted butter – 115g (½ cup)
  • Granulated sugar – 200g (1 cup)
  • Brown sugar – 100g (½ cup)
  • Eggs – 3 large
  • Vanilla extract – 2 teaspoons
  • All-purpose flour – 60g (½ cup)
  • Cocoa powder – 30g (¼ cup)
  • Salt – ½ teaspoon
  • Espresso powder (optional, enhances chocolate flavor) – 1 teaspoon

For Garnish:

  • Chocolate chips or chunks – 50g (⅓ cup)
  • Powdered sugar – For dusting (optional)
  • Whipped cream or vanilla ice cream – For serving

Instructions

1. Prepare the Pie Crust

  1. In a bowl, mix flour, sugar, and salt. Add cold butter cubes and cut them in using a pastry cutter or your fingers until the mixture looks like coarse crumbs.
  2. Gradually add ice water, mixing just until the dough holds together.
  3. Form into a disk, wrap in plastic, and chill for 30 minutes.
  4. Roll out the dough on a floured surface and transfer to a 9-inch pie pan. Trim any excess, crimp the edges, and chill for another 15 minutes.
  5. Preheat oven to 180°C (350°F). Line the crust with parchment paper, fill with baking weights or dried beans, and bake for 10 minutes. Remove weights and bake for 5 more minutes. Set aside.

2. Make the Gooey Brownie Filling

  1. Melt chocolate and butter together in a heatproof bowl over a saucepan of simmering water (double boiler method). Stir until smooth and set aside to cool slightly.
  2. In a mixing bowl, whisk together sugar, brown sugar, eggs, and vanilla extract until light and fluffy.
  3. Gradually mix in the melted chocolate.
  4. Sift in the flour, cocoa powder, salt, and espresso powder. Gently fold until combined.
  5. Stir in chocolate chips or chunks for extra gooeyness.

3. Assemble & Bake

  1. Pour the brownie batter into the par-baked pie crust and spread evenly.
  2. Bake at 180°C (350°F) for 30–35 minutes, until the edges are set but the center is slightly wobbly.
  3. Let it cool for at least 15–20 minutes before slicing. The center will firm up as it cools but will stay soft and gooey!
