Greek Chicken Bowls

Fresh, flavorful, and packed with Mediterranean goodness! These Greek Chicken Bowls are loaded with juicy marinated chicken, fluffy rice or quinoa, crisp veggies, creamy tzatziki, and crumbled feta for the perfect healthy meal prep or quick weeknight dinner.


???? Ingredients

For the Chicken Marinade:

  • 1 ½ lbs (680g) boneless, skinless chicken breasts (or thighs)
  • ¼ cup olive oil
  • 2 tablespoons lemon juice
  • 2 tablespoons red wine vinegar
  • 3 cloves garlic, minced
  • 1 teaspoon dried oregano
  • 1 teaspoon dried basil
  • ½ teaspoon ground cumin
  • ½ teaspoon paprika
  • ½ teaspoon salt
  • ¼ teaspoon black pepper

For the Bowls:

  • 2 cups cooked rice, quinoa, or couscous
  • 1 cup cherry tomatoes, halved
  • 1 cup cucumber, diced
  • ½ red onion, thinly sliced
  • ½ cup kalamata olives, sliced
  • ½ cup crumbled feta cheese
  • ¼ cup fresh parsley, chopped
  • 1 batch tzatziki sauce (see below)

For the Tzatziki Sauce:

  • 1 cup Greek yogurt
  • ½ cup grated cucumber, squeezed dry
  • 1 tablespoon olive oil
  • 1 tablespoon lemon juice
  • 1 clove garlic, minced
  • ½ teaspoon dried dill (or fresh)
  • Salt and pepper to taste

Step 1: Marinate the Chicken

  1. In a bowl, whisk together olive oil, lemon juice, red wine vinegar, garlic, oregano, basil, cumin, paprika, salt, and pepper.
  2. Add the chicken, coat evenly, and marinate for at least 30 minutes (or overnight for best flavor).

Step 2: Cook the Chicken

  1. Heat a grill pan or skillet over medium-high heat.
  2. Cook the chicken for 5-6 minutes per side, until golden brown and fully cooked (165°F internal temp).
  3. Let rest for 5 minutes, then slice into strips.

Step 3: Make the Tzatziki Sauce

  1. In a small bowl, mix together Greek yogurt, grated cucumber, olive oil, lemon juice, garlic, dill, salt, and pepper.
  2. Chill in the fridge while assembling the bowls.

Step 4: Assemble the Bowls

  1. Divide the rice or quinoa between serving bowls.
  2. Top with sliced chicken, tomatoes, cucumbers, red onions, olives, feta, and parsley.
  3. Drizzle with tzatziki sauce and enjoy!
