This vibrant dish is the perfect balance of smoky, savory grilled chicken, crunchy vegetables, and a creamy-sweet dressing that ties it all together beautifully.

For the Salad:

  • 300g boneless, skinless chicken breast
  • 100g mixed salad greens (like romaine, arugula, and spinach)
  • 100g cherry tomatoes, halved
  • 50g red bell pepper, thinly sliced
  • 50g cucumber, sliced
  • 30g red onion, thinly sliced
  • 50g shredded carrot
  • 1 tbsp olive oil (for grilling chicken)
  • 3g salt (½ tsp)
  • 2g black pepper (¼ tsp)
  • ½ tsp paprika or smoked paprika (optional)

For the Sweet Onion Dressing:

  • 60g sweet onion (like Vidalia or yellow onion), finely grated
  • 100g mayonnaise (use Greek yogurt for a lighter version)
  • 15g Dijon mustard
  • 20g honey
  • 15g apple cider vinegar
  • 1 tbsp olive oil
  • Salt & pepper to taste

Step 1: Prepare the Chicken

  1. Pat the chicken dry and season both sides with salt, pepper, and paprika.
  2. Heat a grill pan or outdoor grill over medium-high heat. Brush with olive oil.
  3. Grill the chicken for 5–6 minutes per side, or until cooked through and golden with nice grill marks. Let rest for 5 minutes, then slice thinly.

Step 2: Make the Dressing

  1. In a small bowl or blender, combine grated sweet onion, mayonnaise, mustard, honey, vinegar, and olive oil.
  2. Blend or whisk until smooth. Season with salt and pepper to taste.
  3. Chill in the fridge for 10–15 minutes to allow flavors to meld.

Step 3: Assemble the Salad

  1. In a large bowl or on a platter, layer the mixed greens, cherry tomatoes, bell pepper, cucumber, onion, and carrot.
