🍠 Ingredients

  • 1 lb (450 g) ground turkey
  • 2 medium sweet potatoes, peeled and diced
  • 1 small red onion, chopped
  • 1 red bell pepper, diced
  • 2 cloves garlic, minced
  • 1 tablespoon olive oil
  • 1 teaspoon smoked paprika
  • ½ teaspoon ground cumin
  • ½ teaspoon dried thyme or oregano
  • Salt and pepper, to taste
  • ½ cup shredded mozzarella or cheddar (optional, for topping)
  • Optional garnish: chopped parsley or green onions

  1. Preheat oven to 400°F (200°C). Lightly grease a baking dish or 9×13-inch casserole pan.
  2. Cook ground turkey:
    In a skillet over medium heat, add a little oil and cook the ground turkey with garlic, salt, pepper, paprika, cumin, and thyme. Cook until browned and no longer pink (about 7–8 minutes). Set aside.
  3. Roast the veggies:

  4. Combine & bake:
    Add the cooked turkey to the roasted veggies and mix well. If using cheese, sprinkle it over the top.
  5. Return to oven for another 10 minutes, or until cheese is melted and everything is golden and bubbly.
  6. Garnish and serve warm!
