???? Ingredients (U.S. Standard Measurements)
For the Base:
- 1 tablespoon olive oil
- 1 lb lean ground turkey
- 1 small onion, diced
- 2 garlic cloves, minced
- 1 red bell pepper, diced
- 1 green bell pepper, diced
- 2 medium sweet potatoes, peeled and diced (about 3 cups)
- 1 teaspoon paprika
- ½ teaspoon dried oregano
- ½ teaspoon cumin
- Salt and pepper, to taste
- ½ cup chicken broth or water
Topping:
- ¾ cup shredded mozzarella or cheddar cheese
- 2 tablespoons chopped fresh parsley (optional)
???? Instructions
1. Preheat & Prep
Preheat your oven to 375°F (190°C). Grease a 9×13-inch baking dish and set aside.
2. Cook the Ground Turkey
In a large skillet, heat olive oil over medium heat. Add the diced onion and cook for 2–3 minutes until softened. Add the garlic and ground turkey. Cook until the turkey is browned and fully cooked, breaking it apart with a spoon.
3. Add the Vegetables
Stir in the bell peppers and sweet potatoes. Season with paprika, oregano, cumin, salt, and pepper. Pour in chicken broth and mix well.
4. Simmer
Cover the skillet and simmer for about 10 minutes, until the sweet potatoes are slightly tender but not fully cooked through.
5. Transfer to Baking Dish
Transfer everything to your prepared baking dish and spread into an even layer.
6. Bake
Cover with foil and bake for 20 minutes. Remove foil, sprinkle shredded cheese evenly on top, and return to the oven uncovered for 10 more minutes or until the cheese is melted and bubbly.
7. Garnish & Serve
Remove from oven, sprinkle with chopped parsley, and serve warm.
