Ingredients (in Grams)

  • 120g oat flour (or blended oats)
  • 100g almond flour

  • 60g coconut oil (melted) or unsalted butter
  • 60g maple syrup or honey
  • 1 large egg (or flax egg for vegan option: 1 tbsp flaxseed + 3 tbsp water)
  • 1 teaspoon vanilla extract

Add-Ins:

  • 80g dark chocolate chips (at least 70% cacao for a healthier option)
  • 30g chopped nuts (optional, like walnuts or almonds)

Instructions

Step 1: Preheat & Prep

  1. Preheat your oven to 175°C (350°F).
  2. Line a baking sheet with parchment paper.

Step 2: Mix the Wet Ingredients

  1. In a large bowl, whisk together melted coconut oil, maple syrup (or honey), egg, and vanilla extract until well combined.

Step 3: Add the Dry Ingredients

  1. Add oat flour, almond flour, baking soda, cinnamon, and salt to the wet mixture.
  2. Stir until a soft cookie dough forms.

Step 4: Fold in the Chocolate Chips

  1. Gently fold in dark chocolate chips and chopped nuts (if using).
  2. The dough will be slightly sticky—this is normal!

Step 5: Scoop & Bake

  1. Use a tablespoon or cookie scoop to form dough balls.
  2. Place them on the lined baking sheet, leaving space between each cookie.
  3. Gently press down each ball to slightly flatten (since these cookies won’t spread much).
  4. Bake for 9-11 minutes, or until golden brown on the edges.

Step 6: Cool & Enjoy!

  1. Let the cookies cool on the baking sheet for 5 minutes, then transfer to a wire rack.
