Instructions

Step 1: Preheat & Prepare

  1. Preheat your oven to 175°C (350°F). Line a baking sheet with parchment paper.

Step 2: Mix Dry Ingredients

  1. In a large mixing bowl, whisk together rolled oats, almond flour, baking soda, salt, and cinnamon.

Step 3: Mix Wet Ingredients

  1. In a separate bowl, whisk together the melted coconut oil, honey (or maple syrup), egg, and vanilla extract.

Step 4: Combine Everything

  1. Pour the wet ingredients into the dry ingredients and stir until just combined.
  2. Gently fold in the dark chocolate chips and nuts (if using).

Step 5: Shape & Bake

  1. Using a spoon or cookie scoop, drop tablespoon-sized portions of dough onto the lined baking sheet. Flatten slightly.
