March 25, 2025 by el hassan Leave a Comment

Baking at high altitudes presents its own unique challenges, but that doesn’t mean you can’t indulge in rich, decadent desserts like these High Altitude Brownie Shortbread Bars with Ganache. These bars combine the buttery crunch of a shortbread crust with the fudgy richness of brownies and a silky ganache topping, creating a dessert that’s perfect for any altitude.

These bars are great for high-altitude bakers who might struggle with other recipes, as they’ve been designed to withstand the unique conditions of baking above 3,500 feet. With adjustments to the texture, flavor, and consistency, you can enjoy a dessert that tastes just as amazing whether you’re baking in the mountains or at sea level.

Let’s dive into this delicious recipe that delivers a three-layered sensation of chocolate and buttery goodness!

Ingredients (Makes 12 bars)

For the Shortbread Crust:

  • All-purpose flour – 150g (1 ¼ cups)
  • Granulated sugar – 50g (¼ cup)
  • Salt – ¼ teaspoon
  • Unsalted butter, softened – 115g (½ cup)

For the Brownie Layer:

  • Unsalted butter – 115g (½ cup)
  • Granulated sugar – 200g (1 cup)
  • Cocoa powder – 40g (⅓ cup)
  • Eggs – 2 large
  • Vanilla extract – 1 teaspoon
  • All-purpose flour – 80g (½ cup)
  • Baking powder – ¼ teaspoon
  • Salt – ¼ teaspoon
  • Semi-sweet chocolate chips – 120g (¾ cup)

For the Ganache Topping:

  • Heavy cream – 120ml (½ cup)
  • Semi-sweet chocolate chips – 170g (1 cup)
  • Vanilla extract – ½ teaspoon

Instructions

1. Prepare the Shortbread Crust

  1. Preheat oven to 175°C (350°F). Grease and line a 9×9-inch baking pan with parchment paper, allowing some paper to overhang for easy removal later.
  2. In a bowl, whisk together flour, sugar, and salt.
  3. Add the softened butter and mix until the dough is crumbly and starts to come together.
  4. Press the dough into the bottom of the prepared pan, ensuring it’s even and well-packed.
  5. Bake the shortbread crust for 15–18 minutes or until golden brown around the edges. Remove from the oven and allow to cool while you prepare the brownie layer.

2. Make the Brownie Layer

  1. In a microwave-safe bowl, melt the butter. Add sugar and cocoa powder to the melted butter and stir until fully combined.
  2. Let the mixture cool for a few minutes, then whisk in the eggs and vanilla extract.
  3. In a separate bowl, combine the flour, baking powder, and salt.
  4. Gradually fold the dry ingredients into the wet ingredients until the batter is smooth and well mixed.
  5. Stir in the chocolate chips.
  6. Pour the brownie batter over the cooled shortbread crust, spreading it evenly.
  7. Bake for 25–30 minutes or until a toothpick inserted into the center comes out with only a few moist crumbs (not wet batter). Allow the bars to cool in the pan for at least 30 minutes before adding the ganache.

3. Prepare the Ganache Topping

  1. In a small saucepan, heat the heavy cream over medium heat until it starts to simmer.
  2. Remove from the heat and add the chocolate chips. Stir until smooth and glossy.
  3. Stir in the vanilla extract to enhance the flavor.
  4. Pour the ganache over the cooled brownie bars, spreading it evenly with a spatula.
  5. Let the ganache set at room temperature for about 1 hour, or refrigerate for 15–20 minutes for a quicker set.

4. Serve & Enjoy

  1. Once the ganache has set, cut the bars into 12 squares or rectangles.
  2. Serve as is, or top with a sprinkle of sea salt or a few chocolate shavings for extra flair.

Tips & Tricks for the Perfect High Altitude Brownie Shortbread Bars

✔ Adjust for Altitude – If baking above 3,500 feet, you may need to reduce sugar by 1–2 tablespoons and increase the flour by 1–2 tablespoons to ensure the right texture.

✔ Chill the Ganache for a Firmer Texture – For a thicker, firmer ganache, refrigerate it for 10-15 minutes before spreading over the brownies.

✔ Use Room Temperature Ingredients – Ensure your butter, eggs, and cream cheese are at room temperature for a smooth batter and a more even bake.

✔ Don’t Overbake – Brownies should be set around the edges but slightly soft in the middle. Don’t overbake them, or they will be too dry.

✔ Use High-Quality Chocolate – Since chocolate is the star of this recipe, opt for premium semi-sweet chocolate chips or bars to get the best flavor.

Serving Suggestions

???? With Ice Cream – A scoop of vanilla or salted caramel ice cream pairs perfectly with these fudgy bars.

???? Top with Fresh Berries – Fresh raspberries or strawberries balance the richness and add a pop of color.

☕ With Coffee or Hot Chocolate – The deep chocolate flavor of these bars goes wonderfully with a hot cup of coffee or hot cocoa.

???? With More Chocolate – Drizzle melted chocolate or sprinkle chocolate shavings on top for an extra chocolatey treat!
