Hobo Casserole with Ground Beef & Potatoes

August 8, 2025 by [email protected] Leave a Comment

This hearty and comforting Hobo Casserole is a down-home classic made with simple pantry staples. Layers of seasoned ground beef, tender potatoes, and a creamy cheese sauce are baked to perfection in one dish. It’s the perfect family dinner—quick, budget-friendly, and incredibly satisfying!

Ingredients

  • 1 lb ground beef
  • 1 small onion, chopped
  • 2 cloves garlic, minced
  • 4–5 medium potatoes, peeled and thinly sliced
  • 1 (10.5 oz) can cream of mushroom soup
  • ½ cup milk
  • 1 teaspoon Worcestershire sauce
  • 1½ cups shredded cheddar cheese
  • 1 teaspoon salt
  • ½ teaspoon black pepper
  • ½ teaspoon paprika
  • Fresh parsley, chopped (for garnish)

Instructions

  1. Preheat Oven:
Preheat your oven to 375°F (190°C). Grease a 9×13-inch baking dish.
  2. Cook Ground Beef:
In a skillet over medium heat, cook ground beef, onion, and garlic until the meat is browned and no longer pink. Drain excess fat. Season with salt, pepper, and paprika.
  3. Prepare Sauce:
In a bowl, mix cream of mushroom soup, milk, and Worcestershire sauce until smooth.
  4. Layer the Casserole:
Spread half the sliced potatoes in the baking dish. Top with half the beef mixture and half the sauce. Repeat layers. Sprinkle cheddar cheese evenly over the top.
  5. Bake:
Cover tightly with foil and bake for 50–60 minutes, or until potatoes are fork-tender. Remove foil and bake for an additional 10–15 minutes until cheese is golden and bubbly.
  6. Serve:
Let rest for 5 minutes. Garnish with chopped parsley before serving.

Tips

  • Thinly slice the potatoes so they cook evenly—use a mandoline if you have one.
  • Cover tightly with foil to trap steam and help the potatoes soften.
  • Add a layer of foil under your casserole dish to catch any bubbly overflow.
  • Let the casserole sit for a few minutes before serving for easier slicing and better flavor.

Variations and Substitutions

  • Add Veggies: Include sliced carrots, green beans, corn, or peas between the layers for more nutrition.
  • Cheese Swap: Use Colby Jack, mozzarella, or pepper jack for a twist.
  • No Cream of Mushroom? Substitute with cream of chicken or a homemade white sauce.
  • Make It Spicy: Add a pinch of chili powder or diced jalapeños for heat.
  • Vegetarian Version: Replace the beef with lentils or a plant-based ground.

FAQs

Can I make this ahead of time?
Yes! Assemble the casserole, cover, and refrigerate up to 24 hours in advance. Add 10–15 minutes to the baking time if baking from cold.

Can I freeze Hobo Casserole?
Yes—freeze before or after baking. If freezing unbaked, thaw completely before baking as directed.

What kind of potatoes work best?
Yukon Golds or Russets are ideal. They’re starchy and soften nicely in casseroles.

How do I reheat leftovers?
Reheat individual portions in the microwave, or warm in the oven at 350°F (175°C) until heated through.

Serving Suggestions

  • Pair with a simple green salad or steamed veggies for a balanced meal.
  • Add buttery dinner rolls or cornbread to soak up the creamy sauce.
  • Serve with pickles or tangy coleslaw for a pop of contrast.
  • Top with a dollop of sour cream or hot sauce for extra flavor.
