Homemade Baguette

Few things are as satisfying as baking your own crusty, golden baguette at home! This easy French baguette recipe requires just four simple ingredients and delivers a beautifully crispy crust with a soft, airy interior.

No need for fancy equipment—just a bowl, some patience, and a baking sheet! Whether you’re making a sandwich, pairing it with cheese, or simply slathering it with butter, this homemade baguette will elevate any meal.


Ingredients (Makes 2 Baguettes)

  • Bread flour – 500 g (4 cups)
  • Water (warm, about 43°C/110°F) – 325 ml (1⅓ cups)
  • Instant yeast – 7 g (2¼ tsp or 1 packet)
  • Salt – 10 g (2 tsp)

Optional for Extra Crustiness:

  • Cornmeal or semolina – for dusting
  • Ice cubes – for steam baking

Step-by-Step Instructions

Step 1: Activate the Yeast

  1. In a large bowl, combine the warm water and yeast. Stir gently and let sit for 5 minutes until foamy.

Step 2: Make the Dough

  1. Add the bread flour and salt to the yeast mixture. Mix with a spoon or dough hook until a shaggy dough forms.
  2. Transfer to a lightly floured surface and knead for 10 minutes, until smooth and elastic. (If using a stand mixer, knead for about 5 minutes on medium speed.)
  3. Shape the dough into a ball, place it in a greased bowl, cover, and let it rise in a warm spot for 60–90 minutes, until doubled in size.

Step 3: Shape the Baguettes

  1. Punch down the dough and divide it into two equal pieces.
  2. Roll each piece into a long, thin baguette shape (about 35 cm/14 inches).
  3. Place them on a parchment-lined baking sheet, lightly dusted with cornmeal or flour to prevent sticking.

Step 4: Second Rise

  1. Cover with a clean towel and let rise for 30–45 minutes, until puffy.
  2. Meanwhile, preheat the oven to 230°C (450°F) and place a pan of water on the bottom rack for steam. (This helps create a crispy crust!)

Step 5: Bake the Baguettes

  1. Right before baking, use a sharp knife or razor blade to make three to four diagonal slashes on each baguette.
  2. Bake for 20–25 minutes, until golden brown and crisp.
  3. Remove from the oven and let cool on a wire rack before slicing.
