Homemade Popcorn Chicken

Crispy, golden, bite-sized popcorn chicken is a fun and delicious snack or meal that’s perfect for all ages! This homemade version is easy to make with tender chicken pieces coated in a seasoned crust, fried or baked to perfection. Serve with your favorite dipping sauce for an irresistible treat.


Ingredients

  • 1 lb boneless, skinless chicken breasts, cut into bite-sized pieces
  • 1 cup buttermilk
  • 1 cup all-purpose flour
  • 1/2 cup cornstarch
  • 1 tsp garlic powder
  • 1 tsp paprika
  • 1/2 tsp cayenne pepper (optional, for spice)
  • Salt and pepper to taste
  • Vegetable oil (for frying)

Instructions

  1. Marinate the Chicken: Place the chicken pieces in a bowl and pour the buttermilk over them. Cover and let marinate in the refrigerator for at least 30 minutes (or up to 4 hours for extra tenderness).
  2. Prepare the Coating: In a separate bowl, mix the flour, cornstarch, garlic powder, paprika, cayenne (if using), salt, and pepper.
  3. Coat the Chicken: Remove the chicken from the buttermilk, letting the excess drip off. Toss the pieces in the flour mixture until fully coated. For extra crispiness, dip the chicken back in the buttermilk and coat it in the flour mixture a second time.
  4. Fry the Chicken: Heat about 2 inches of vegetable oil in a deep skillet or pot to 350°F (175°C). Fry the chicken in batches for 4-5 minutes, or until golden brown and fully cooked (internal temperature of 165°F). Remove and drain on a paper towel-lined plate.
  5. Serve: Enjoy hot with your favorite dipping sauces like ranch, honey mustard, or BBQ sauce.

Tips for Perfect Popcorn Chicken

  • Air Fryer Option: Spray coated chicken lightly with cooking spray and air fry at 400°F for 10-12 minutes, shaking halfway through.
  • Baking Option: Bake at 400°F on a greased baking sheet for 20-25 minutes, flipping halfway.
  • Make Ahead: Freeze uncooked coated chicken pieces in a single layer, then transfer to a freezer bag for later use. Cook straight from frozen.
  • Season to Taste: Add Italian seasoning, lemon pepper, or even grated Parmesan to the flour mixture for extra flavor.
