For 12 sausage rolls, you’ll need:

For the Sausage Filling:

  • 1 lb ground pork sausage (or any preferred sausage meat)
  • ½ teaspoon salt
  • ½ teaspoon black pepper
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • ½ teaspoon paprika (optional, for a smoky flavor)
  • 1 teaspoon dried thyme or parsley
  • ¼ teaspoon red pepper flakes (optional, for a little heat)
  • ¼ cup breadcrumbs (to help bind the filling)
  • 1 large egg (for binding)

For the Pastry:

  • 1 sheet puff pastry, thawed
  • 1 large egg + 1 tablespoon water (for egg wash)
  • 1 teaspoon sesame seeds or poppy seeds (optional, for garnish)

Instructions

Step 1: Preheat & Prep

  1. Preheat your oven to 375°F (190°C).
  2. Line a baking sheet with parchment paper.

Step 2: Make the Sausage Filling

  1. In a bowl, mix together ground sausage, salt, pepper, garlic powder, onion powder, paprika, thyme, red pepper flakes, breadcrumbs, and 1 egg.
  2. Stir until well combined.

Step 3: Assemble the Sausage Rolls

  1. Roll out the puff pastry into a rectangle and cut it into two long strips.
  2. Divide the sausage mixture into two equal portions and shape each into a long log down the center of each pastry strip.
  3. Fold the pastry over the sausage filling, pressing the edges to seal tightly.
  4. Use a knife to cut each log into 6 smaller rolls.

Step 4: Bake to Golden Perfection

  1. Place the sausage rolls seam-side down on the prepared baking sheet.
  2. Brush the tops with egg wash and sprinkle with sesame or poppy seeds.
  3. Bake for 20-25 minutes, or until golden brown and crispy.
  4. Let cool for a few minutes before serving.
