How to Make Strawberry Soda

Step 1: Make the Strawberry Syrup

  2. Stir and bring to a gentle simmer. Cook for 10-12 minutes, stirring occasionally, until the strawberries are soft and syrupy.
  3. Mash the strawberries with a spoon or potato masher to release more juice.
  4. Remove from heat and stir in lemon juice.

Step 2: Strain the Syrup

  1. Pour the mixture through a fine-mesh strainer into a bowl or jar, pressing down on the strawberries to extract all the liquid.
  2. Discard the leftover strawberry pulp (or save it for yogurt or oatmeal toppings!).
  3. Let the syrup cool to room temperature.

Step 3: Assemble the Soda

  1. Fill glasses with ice cubes and 2-3 tbsp of strawberry syrup.
  2. Top with sparkling water, stirring gently to combine.
