Hot Honey Chicken Bowls

Ingredients (Serves 4)

For the Chicken:

  • 500g (1 lb) boneless, skinless chicken breasts or thighs (cut into bite-sized pieces)
  • 60g (½ cup) cornstarch
  • 1 teaspoon garlic powder
  • ½ teaspoon salt
  • ½ teaspoon black pepper
  • 2 tablespoons olive oil or butter

For the Hot Honey Sauce:

  • 120ml (½ cup) honey
  • 2 tablespoons hot sauce (adjust to taste)
  • 1 tablespoon apple cider vinegar
  • 1 teaspoon red pepper flakes
  • 1 teaspoon soy sauce
  • 1 teaspoon butter

For the Bowls:

  • 2 cups cooked rice (white, brown, or cauliflower rice)
  • 1 avocado, sliced
  • 1 cup cherry tomatoes, halved
  • ½ cup shredded carrots
  • ¼ cup chopped green onions
  • Sesame seeds (for garnish, optional)
  • Fresh cilantro or parsley (for garnish, optional)

Instructions

Step 1: Prepare the Chicken

  1. In a bowl, mix cornstarch, garlic powder, salt, and black pepper.
  2. Toss the chicken pieces in the mixture until fully coated.
  3. Heat olive oil or butter in a pan over medium-high heat.
  4. Cook the chicken for 4-5 minutes per side until crispy and golden brown. Remove from heat.

Step 2: Make the Hot Honey Sauce

  1. In a small saucepan over low heat, combine honey, hot sauce, apple cider vinegar, red pepper flakes, soy sauce, and butter.
  2. Stir until the sauce is smooth and slightly thickened (2-3 minutes).

Step 3: Coat the Chicken

  1. Pour the hot honey sauce over the cooked chicken and toss to coat evenly.

Step 4: Assemble the Bowls

  1. Divide the cooked rice into serving bowls.
  2. Top with hot honey chicken, avocado slices, cherry tomatoes, shredded carrots, and green onions.
  3. Garnish with sesame seeds and fresh cilantro.
  4. Drizzle extra hot honey sauce on top and enjoy!
