How to Make Tartlet Shells

Ingredients

For 12 tartlet shells, you’ll need:

  • 1 ¼ cups all-purpose flour
  • ½ cup unsalted butter, cold and cubed
  • ¼ teaspoon salt (for savory tartlets, add ½ teaspoon)
  • 1 tablespoon granulated sugar (optional, for sweet tartlets)
  • 1 egg yolk
  • 2 tablespoons cold water

Instructions

Step 1: Make the Dough

  1. In a food processor or mixing bowl, combine flour, salt, and sugar (if using).
  2. Add cold butter cubes and pulse (or rub with your fingers) until the mixture resembles coarse crumbs.
  3. Add egg yolk and cold water, mixing just until the dough comes together (don’t overmix).
  4. Shape the dough into a disk, wrap in plastic wrap, and chill for 30 minutes.

Step 2: Roll & Shape the Tartlets

  1. Preheat oven to 375°F (190°C).
  2. Lightly flour a surface and roll out the chilled dough to about ⅛-inch thick.
  3. Use a round cookie cutter or glass to cut circles slightly larger than your tartlet molds.
  4. Press the dough into greased mini tart pans or a muffin tin, trimming any excess.
  5. Prick the bottoms with a fork to prevent puffing.

Step 3: Bake the Tartlet Shells

  1. Line each tartlet shell with parchment paper and fill with pie weights (or dry beans).
  2. Bake for 10 minutes, then remove the weights and bake for another 5-7 minutes until golden brown.
  3. Let cool completely before filling.

Storage & Make-Ahead Tips

✔ Store Baked Tartlets: Keep in an airtight container at room temperature for 3 days or freeze for up to 1 month.
✔ Refrigerate Unbaked Dough: Wrap tightly and refrigerate for up to 3 days before rolling out.
