🍖 Ingredients

  • 2 lbs (900 g) beef stew meat or sirloin tips, cut into chunks
  • Salt and black pepper, to taste
  • 2 tablespoons olive oil
  • 1 small onion, diced
  • 3 garlic cloves, minced
  • 2 cups beef broth (low-sodium recommended)
  • 1 tablespoon Worcestershire sauce
  • 1 teaspoon onion powder
  • 1 teaspoon dried thyme
  • ½ teaspoon paprika
  • 1 tablespoon cornstarch + 1 tablespoon water (for slurry)

Optional: fresh parsley, for garnish


⚙️ Instructions

  1. Sear the beef (optional but recommended):
    Set the Instant Pot to Sauté mode. Heat olive oil, then brown beef tips in batches. Season with salt and pepper. Remove and set aside.
  2. Sauté aromatics:
    Add a bit more oil if needed, then sauté diced onion for 2–3 minutes. Add garlic and cook another 30 seconds.
  3. Deglaze the pot:
    Pour in a splash of beef broth and use a wooden spoon to scrape up the browned bits.
  4. Pressure cook:
    Return beef to the pot. Add remaining broth, Worcestershire, onion powder, thyme, and paprika. Stir to combine.
    • Seal the lid, set valve to Sealing.
    • Cook on High Pressure for 25 minutes.
    • Let pressure naturally release for 10 minutes, then quick release the rest.
  5. Make the gravy:
    Switch back to Sauté mode. Stir in cornstarch slurry and cook for 2–3 minutes, stirring, until the gravy thickens.
  6. Serve hot, garnished with parsley if desired.
