Ingredients (Serves 12–15)

For the Cake:

  • All-purpose flour – 250g (2 cups)
  • Granulated sugar – 300g (1 ½ cups)
  • Unsalted butter, softened – 170g (¾ cup)
  • Eggs, separated – 5 large
  • Baking soda – 1 teaspoon
  • Baking powder – ½ teaspoon
  • Salt – ½ teaspoon
  • Whole milk or buttermilk – 240ml (1 cup)
  • Vanilla extract – 2 teaspoons
  • Sweetened shredded coconut – 100g (1 cup)
  • Chopped pecans – 100g (1 cup)

For the Cream Cheese Frosting:

  • Cream cheese, softened – 225g (8 oz)
  • Unsalted butter, softened – 115g (½ cup)
  • Powdered sugar – 400g (3 ½ cups)
  • Vanilla extract – 1 ½ teaspoons
  • Milk or heavy cream – 2 tablespoons
  • Chopped pecans (for topping) – 50g (½ cup)
  • Shredded coconut (for topping, optional) – 30g (¼ cup)

Instructions

1. Prepare the Cake Batter

  1. Preheat oven to 175°C (350°F). Grease and flour a 9×13-inch baking pan.
  2. In a large mixing bowl, cream together the butter and sugar until light and fluffy (about 3–4 minutes).
  3. Add the egg yolks, one at a time, beating well after each addition.
  4. In a separate bowl, whisk together flour, baking soda, baking powder, and salt.
  5. Gradually add the dry ingredients to the butter mixture, alternating with buttermilk, mixing until just combined.
  6. Stir in the vanilla extract, shredded coconut, and chopped pecans.

2. Whip the Egg Whites

  1. In a clean, dry mixing bowl, beat the egg whites on high speed until stiff peaks form.
  2. Gently fold the egg whites into the cake batter, being careful not to deflate them.

3. Bake the Cake

  1. Pour the batter into the prepared baking pan and spread evenly.
  2. Bake for 30–35 minutes, or until a toothpick inserted in the center comes out clean.
  3. Let the cake cool completely in the pan before frosting.

4. Prepare the Cream Cheese Frosting

  1. In a mixing bowl, beat cream cheese and butter until smooth.
  2. Gradually add powdered sugar, one cup at a time, mixing until fluffy.
  3. Stir in vanilla extract and milk or heavy cream to reach the desired consistency.

5. Assemble the Cake

  1. Spread the cream cheese frosting evenly over the cooled cake.
  2. Sprinkle the top with chopped pecans and shredded coconut for extra texture and flavor.
  3. Slice and serve!
