Italian Grinder Sandwich

The Italian Grinder Sandwich is a classic sub that combines layers of savory Italian meats, creamy provolone cheese, and a tangy grinder salad, all nestled within a crusty Italian loaf. This hearty sandwich is perfect for gatherings or a satisfying meal at home.


Ingredients

For the Grinder Salad:

  • 2 cups shredded iceberg lettuce
  • ½ cup thinly sliced red onion
  • ⅓ cup sliced pepperoncini peppers
  • 3 tablespoons red wine vinegar
  • 3 tablespoons extra virgin olive oil
  • 1 teaspoon dried oregano
  • 1 small garlic clove, minced
  • Salt and freshly ground black pepper to taste

For the Sandwich:

  • 1 large Italian loaf or 4 hoagie rolls
  • ¼ cup mayonnaise
  • ⅓ pound provolone cheese, sliced
  • ⅓ pound capicola
  • ⅓ pound mortadella
  • ⅓ pound salami

Instructions

1. Prepare the Grinder Salad:

  • In a medium bowl, combine the shredded lettuce, sliced red onion, and pepperoncini peppers.
  • In a small bowl, whisk together the red wine vinegar, olive oil, dried oregano, minced garlic, salt, and black pepper.
  • Pour the dressing over the lettuce mixture and toss until evenly coated. Set aside.

2. Assemble the Sandwich:

  • Slice the Italian loaf or hoagie rolls horizontally.
  • Spread a thin layer of mayonnaise on both the top and bottom halves.
  • On the bottom half, layer the provolone cheese, followed by the capicola, mortadella, and salami.
  • Top the meats with the prepared grinder salad.
  • Place the top half of the bread over the fillings.

3. Serve:

  • Cut the sandwich into desired portions and serve immediately.
