Jalapeño Corn Nuggets

  • ½ cup breadcrumbs (panko for extra crunch)
  • 1 tablespoon milk (if needed to bind)

For frying:

  • Vegetable oil for deep frying

Instructions

Step 1: Make the Filling

In a large bowl, mix together corn, jalapeño, cheddar, cream cheese, egg, garlic powder, onion powder, salt, and pepper. Stir until well combined. If mixture feels too dry, add a splash of milk.

Step 2: Shape the Nuggets

Scoop tablespoon-sized portions and shape into small balls or nuggets. Place them on a baking sheet and freeze for 20–30 minutes to firm up.

Step 3: Bread the Nuggets

In a bowl, mix together flour, cornmeal, and breadcrumbs. Roll each chilled nugget in the dry mixture until fully coated.

Step 4: Cook

Option 1 – Deep Fry:

Heat oil to 350°F (175°C). Fry nuggets in batches for 2–3 minutes, or until golden and crispy. Drain on paper towels.

Option 2 – Air Fryer:

Spray nuggets with oil and air fry at 400°F (200°C) for 8–10 minutes, flipping halfway through.

Option 3 – Oven Baked:

Place nuggets on a lined baking sheet, spray with oil, and bake at 425°F (220°C) for 15–18 minutes until golden.
