Jalapeño Corn Nuggets

  • Vegetable oil for frying (about 2–3 cups)

Step 1: Make the Filling

In a large bowl, mix together corn, chopped jalapeños, cheddar, cream cheese, garlic powder, onion powder, salt, and pepper. Stir until well combined and sticky.

Step 2: Shape and Freeze

Scoop small spoonfuls of the mixture (about 1 tablespoon each) and roll into balls or nuggets. Place them on a baking sheet lined with parchment paper. Freeze for at least 30 minutes — this helps them hold shape when frying.

Step 3: Set Up the Breading Station

Prepare three bowls: one with flour, one with beaten eggs, and one with breadcrumbs.

Step 4: Bread the Nuggets

Take each frozen nugget and coat it in flour, dip it in egg, then roll in breadcrumbs. Press gently so the coating sticks well.

Step 5: Fry to Golden Perfection

Heat oil in a deep skillet or saucepan to 350°F (175°C). Fry nuggets in small batches for 2–3 minutes or until golden brown. Drain on paper towels.

Step 6: Serve
