Ingredients (Serves 6)

For the Soup:

  • 1 lb ground beef (or Italian sausage)
  • 1 small onion, diced
  • 3 cloves garlic, minced
  • 4 cups beef broth

  • 1 (15 oz) can tomato sauce
  • 2 tbsp tomato paste
  • 1 tsp Italian seasoning
  • 1 tsp dried basil
  • ½ tsp salt
  • ½ tsp black pepper
  • ¼ tsp red pepper flakes (optional, for heat)
  • 8 lasagna noodles, broken into bite-sized pieces
  • 1 cup water (if needed to thin the soup)

For the Cheese Topping:

  • 1 cup ricotta cheese
  • ½ cup shredded mozzarella cheese
  • ¼ cup grated Parmesan cheese
  • 1 tbsp fresh parsley, chopped (or 1 tsp dried parsley)

How to Make Lasagna Soup

Step 1: Cook the Meat

  1. In a large pot or Dutch oven, brown the ground beef over medium heat. Drain excess grease.
  2. Add onion and garlic, sautéing for 2-3 minutes until softened.

Step 2: Build the Soup Base

  1. Stir in crushed tomatoes, tomato sauce, tomato paste, beef broth, Italian seasoning, basil, salt, pepper, and red pepper flakes.
  2. Bring to a boil, then reduce heat and let it simmer for 10 minutes to develop flavors.

Step 3: Cook the Pasta

  1. Add the broken lasagna noodles to the pot. Simmer for 10-12 minutes until the pasta is tender.
  2. If the soup is too thick, add 1 cup of water to adjust the consistency.

Step 4: Prepare the Cheese Mixture

  1. In a small bowl, mix ricotta, mozzarella, Parmesan, and parsley.

  1. Ladle hot lasagna soup into bowls and top with a scoop of the cheesy mixture.
