Lazy Chicken Parmesan Grilled Cheese

What happens when you take the comfort of grilled cheese and the flavor-packed goodness of chicken Parmesan? You get this Lazy Chicken Parmesan Grilled Cheese — crispy, golden bread layered with marinara, melty mozzarella, juicy chicken, and a touch of parmesan for that Italian flair.

It’s called “lazy” because it skips the breading and frying of traditional chicken parm. Instead, you use precooked chicken or leftover rotisserie, jarred marinara, and just a few pantry staples. The result? A warm, gooey, flavor-loaded sandwich that takes 15 minutes to make and tastes like a guilty pleasure — minus the guilt.

Whether you’re cooking for one or feeding a hungry family, this is your new go-to grilled cheese upgrade.


???? Ingredients (Makes 2 sandwiches)

  • 4 slices of hearty white or sourdough bread
  • 1 cup cooked chicken breast (shredded or sliced thin)
  • 1/2 cup marinara sauce (store-bought or homemade)
  • 1 cup shredded mozzarella cheese
  • 1/4 cup grated Parmesan cheese
  • 2 tablespoons butter (softened)
  • 1/2 teaspoon garlic powder
  • 1/2 teaspoon dried Italian seasoning

1. Make Garlic Butter

In a small bowl, mix the softened butter with garlic powder and Italian seasoning. Spread it on one side of each slice of bread.

2. Build the Sandwiches

Lay two slices of bread (butter side down) on a cutting board.
Top each with mozzarella cheese, chicken, a spoonful of marinara, and a sprinkle of Parmesan.
Add a bit more mozzarella on top to help the sandwich stick together, then close with remaining bread slices (butter side up).

3. Grill to Perfection

Heat a skillet or griddle over medium heat.
Place the sandwiches in the pan and cook 3–4 minutes per side, pressing slightly with a spatula, until the bread is golden brown and the cheese is melted.

4. Serve

Let cool for 1 minute, slice in half, and serve with extra marinara for dipping.
