  • ยพ cup unsalted butter, softened
  • 1ยฝ cups granulated sugar

  • 1 tablespoon lemon zest
  • ยผ cup lemon juice (fresh)
  • 1 teaspoon vanilla extract
  • 1 cup buttermilk

For the Lemon Cream Cheese Frosting:

  • 1 package (8 oz) cream cheese, softened
  • ยฝ cup unsalted butter, softened
  • 3ยฝ cups powdered sugar
  • 2 tablespoons lemon juice
  • 1 teaspoon lemon zest
  • Pinch of salt

Instructions

Make the Blueberry Cheesecake Layer:

  1. Preheat oven to 325ยฐF (165ยฐC). Line the bottom of a 9-inch springform pan with parchment paper.
  2. Beat cream cheese and sugar until smooth. Add eggs one at a time, then vanilla. Gently fold in blueberries.
  3. Pour into prepared pan and bake for 35โ€“40 minutes, or until set. Cool completely, then freeze for at least 1 hour before assembling the cake.

Make the Lemon Cake:

  1. Preheat oven to 350ยฐF (175ยฐC). Grease and flour two 9-inch round cake pans.
  2. In a bowl, whisk together flour, baking powder, baking soda, and salt.
  3. In a large bowl, cream butter and sugar until light and fluffy. Beat in eggs one at a time, then mix in lemon zest, juice, and vanilla.
  4. Add flour mixture in three parts, alternating with buttermilk. Mix just until combined.
  5. Divide batter between the two pans. Bake for 25โ€“28 minutes or until a toothpick comes out clean. Let cool completely.

Make the Frosting:

  1. Beat cream cheese and butter until smooth. Gradually add powdered sugar, lemon juice, zest, and salt. Beat until fluffy.

Assemble the Cake:

  1. Place one lemon cake layer on a serving plate. Spread a thin layer of frosting on top.
  2. Unmold the cheesecake layer and place on top. Add another thin layer of frosting.
  3. Top with the second lemon cake layer. Frost the top and sides with remaining lemon cream cheese frosting.
  4. Chill at least 1 hour before slicing. Garnish with blueberries, lemon slices, or edible flowers if desired.

๐Ÿ’ก Tips

  • Freeze the cheesecake layer to make it easier to assemble and stack.
  • Use a cake leveler or serrated knife to trim cake layers flat for a polished look.
  • Donโ€™t overmix the cake batter to keep it light and fluffy.
  • Fresh blueberries are best, but frozen work wellโ€”just toss them in flour to prevent sinking.

๐Ÿ” Variations and Substitutions

  • Swap berries: Try raspberries or blackberries instead of blueberries.
  • Add a lemon curd layer between the cheesecake and cake for extra zing.
  • Gluten-free option: Use a gluten-free 1:1 flour blend.
  • No buttermilk? Use 1 cup milk + 1 tbsp lemon juice or vinegar as a substitute.
