  • 1 large egg
  • 1 tsp vanilla extract
  • 1 tbsp lemon zest
  • 200g (1⅔ cups) all-purpose flour
  • ½ tsp baking powder
  • ¼ tsp salt

For the Lemon Glaze (Optional):

  • 120g (1 cup) powdered sugar
  • 1-2 tbsp fresh lemon juice
  • 1 tsp lemon zest

How to Make Lemon Lavender Cookies

Step 1: Prepare the Dough

  1. In a bowl, beat butter and sugar until light and fluffy.
  2. Add lavender, lemon zest, vanilla extract, and egg, mixing well.
  3. In another bowl, whisk flour, baking powder, and salt.
  4. Gradually mix dry ingredients into the wet ingredients until a dough forms.
  5. Wrap and chill the dough for 30 minutes.

Step 2: Bake the Cookies

  1. Preheat oven to 175°C (350°F).
  2. Roll out dough to 6mm (¼-inch) thickness and cut into round or floral shapes.
  3. Place cookies on a lined baking sheet and bake for 10-12 minutes, until edges are lightly golden.
  4. Let cool completely.

Step 3: Make the Lemon Glaze (Optional)

  1. Mix powdered sugar with lemon juice and zest until smooth.
  2. Drizzle or dip cookies in the glaze and let set.
