Lemon Meltaways

Soft, buttery, and bursting with lemon flavor—these cookies will melt your heart and your taste buds!

Light, tender, and dusted in powdered sugar, lemon meltaways are the perfect addition to tea time, holiday cookie trays, or everyday cravings. They’re easy to make and even easier to devour.


???? Ingredients (Makes ~24 cookies)

For the Cookies:

  • Unsalted butter (softened) – 170g
  • Powdered sugar – 60g
  • Lemon zest – 1 tbsp (from about 1 large lemon)
  • Fresh lemon juice – 2 tbsp (30ml)
  • Vanilla extract – 1 tsp
  • All-purpose flour – 180g
  • Cornstarch – 40g
  • Salt – ¼ tsp

For the Coating:

  • Powdered sugar – 60g, for rolling

1. Cream Butter and Sugar

In a large bowl, cream the butter and powdered sugar together until light and fluffy, about 2–3 minutes.

2. Add Flavors

Mix in the lemon zest, lemon juice, and vanilla extract until fully incorporated.

3. Add Dry Ingredients

Sift together the flour, cornstarch, and salt, then gradually mix into the wet ingredients. The dough will be soft but not sticky.

4. Chill the Dough

Form the dough into a log about 5 cm (2 inches) in diameter. Wrap in plastic wrap and chill in the fridge for 1–2 hours, or until firm.

5. Slice and Bake

Preheat oven to 175°C (350°F) and line a baking sheet with parchment paper.
Slice the dough into 0.5 cm (¼ inch) thick rounds and place them on the sheet, spaced slightly apart.

Bake for 10–12 minutes, or until the edges are just barely golden (do not overbake).

6. Coat in Powdered Sugar

Let cookies cool for 5 minutes, then gently toss in powdered sugar while still warm. Let cool completely and dust with more sugar if desired.
