Lemon Meringue Pie Bites

Tangy, sweet, and perfectly poppable! These Lemon Meringue Pie Bites deliver all the bright citrus flavor of a classic lemon meringue pie in a mini, hand-held treat. With buttery crusts, luscious lemon curd, and fluffy toasted meringue, they’re an irresistible bite-sized dessert for any occasion!


Ingredients

  • 1 pre-made pie crust (or homemade, rolled thin)
  • 1/2 cup lemon curd (store-bought or homemade)
  • 2 large egg whites
  • 1/4 cup granulated sugar

A blend of zesty lemon and velvety meringue in every crisp, buttery bite.


Instructions

  1. Prep the Crusts: Preheat oven to 350°F (175°C). Use a round cutter to cut pie crust into small circles. Press into a mini muffin tin to form cups.
  2. Bake Crusts: Bake for 10-12 minutes or until golden brown. Cool completely.
  3. Fill with Lemon Curd: Spoon a dollop of lemon curd into each cooled crust.
  4. Make the Meringue: Beat egg whites on high until soft peaks form. Gradually add sugar, beating until stiff peaks form.
  5. Top and Toast: Pipe or spoon meringue onto each bite. Use a kitchen torch to lightly toast the meringue, or broil for 1-2 minutes.
  6. Serve: Enjoy immediately or store in the fridge for up to 2 days.
