Ingredients:
- 1/2 lb (8oz/220g) pasta (spaghetti, linguine, penne, fusilli)
- 1 cup (9oz/250g) whole-milk ricotta
- 8 oz (230g) fresh baby spinach, washed
- 1/3 cup (35g) grated Parmesan cheese, plus extra to serve
- 1 unwaxed lemon, zest and juice
- 1 Tbsp extra virgin olive oil, plus extra for drizzling
- 1 garlic clove, grated or pressed
- Salt and black pepper, to taste

Instructions:
- Cook pasta in a large pot of salted boiling water according to package instructions until al dente.
- While pasta cooks, prepare the ricotta sauce by combining ricotta, olive oil, Parmesan, garlic, lemon zest, and juice in a medium bowl. Season with salt and pepper, and mix until well combined.
- In the last minute of cooking, add spinach to the pot with the pasta and stir to submerge. Cook for 1 minute.
- Drain pasta and spinach, reserving 1/2 cup of pasta water. Return pasta and spinach to the pot and add the ricotta sauce, along with some of the reserved pasta water to achieve a creamy consistency. Add more water as needed for smoothness.
- Serve immediately, topped with extra Parmesan, a drizzle of olive oil, and lemon wedges. Optionally, sprinkle with red pepper flakes for an extra kick!
Notes:
- Pasta Water: Gradually add the reserved pasta water, you may not need all of it. It helps create a smooth, creamy sauce without watering down the flavor.
- Pasta Shapes: Spaghetti works best, but you can also use penne, fusilli, or conchiglie. Avoid smaller shapes like orzo or elbow macaroni.
- Optional: For extra flavor, a pinch of red pepper flakes adds a nice touch of heat.
