Lemon Ricotta Pasta with Spinach

Lemon Ricotta Pasta with Spinach is a light, zesty, and creamy dish that’s perfect for a quick weeknight meal. Ready in under 15 minutes, this simple and flavorful pasta features fresh ricotta, spinach, and a bright lemon kick. It’s a delicious combination of creamy, tangy, and savory, and it’s sure to be a family favorite! ????????????

Ingredients:

  • 1/2 lb (8oz/220g) pasta (spaghetti, linguine, penne, fusilli)
  • 1 cup (9oz/250g) whole-milk ricotta
  • 8 oz (230g) fresh baby spinach, washed
  • 1/3 cup (35g) grated Parmesan cheese, plus extra to serve
  • 1 unwaxed lemon, zest and juice
  • 1 Tbsp extra virgin olive oil, plus extra for drizzling
  • 1 garlic clove, grated or pressed
  • Salt and black pepper, to taste

Instructions:

  1. Cook pasta in a large pot of salted boiling water according to package instructions until al dente.
  2. While pasta cooks, prepare the ricotta sauce by combining ricotta, olive oil, Parmesan, garlic, lemon zest, and juice in a medium bowl. Season with salt and pepper, and mix until well combined.
  3. In the last minute of cooking, add spinach to the pot with the pasta and stir to submerge. Cook for 1 minute.
  4. Drain pasta and spinach, reserving 1/2 cup of pasta water. Return pasta and spinach to the pot and add the ricotta sauce, along with some of the reserved pasta water to achieve a creamy consistency. Add more water as needed for smoothness.
  5. Serve immediately, topped with extra Parmesan, a drizzle of olive oil, and lemon wedges. Optionally, sprinkle with red pepper flakes for an extra kick!

Notes:

  • Pasta Water: Gradually add the reserved pasta water, you may not need all of it. It helps create a smooth, creamy sauce without watering down the flavor.
  • Pasta Shapes: Spaghetti works best, but you can also use penne, fusilli, or conchiglie. Avoid smaller shapes like orzo or elbow macaroni.
  • Optional: For extra flavor, a pinch of red pepper flakes adds a nice touch of heat.
