Loaded Potato Ranch Chicken Casserole

Main Ingredients:

  • Boneless, skinless chicken breast – 500g, diced
  • Russet potatoes – 700g, peeled and diced into 2 cm cubes
  • Olive oil – 30g (2 tbsp)
  • Ranch seasoning mix – 15g (1 packet or homemade equivalent)
  • Garlic powder – 5g (1 tsp)
  • Onion powder – 5g (1 tsp)
  • Smoked paprika – 2g (½ tsp)
  • Salt – to taste (around 4g / ¾ tsp)
  • Black pepper – to taste

Toppings:

  • Cooked bacon – 120g, chopped
  • Shredded cheddar cheese – 200g
  • Green onions – 20g, thinly sliced
  • Sour cream – optional, for serving

Step 1: Prep the Potatoes

  1. Preheat your oven to 220°C (425°F).
  2. Toss the diced potatoes in a bowl with olive oil, half the ranch seasoning, garlic powder, onion powder, paprika, salt, and pepper until well coated.
  3. Spread them evenly on a greased or parchment-lined baking dish (9×13″).
  4. Bake for 25 minutes, stirring once halfway through, until the potatoes start to brown and crisp up.

Step 2: Add the Chicken

  1. While potatoes are baking, toss the diced chicken with the remaining ranch seasoning.
  2. After 25 minutes, remove the baking dish from the oven, top the potatoes with the seasoned chicken, and give everything a gentle mix.
  3. Return to the oven and bake for 20 more minutes, or until the chicken is fully cooked through.

Step 3: Load It Up!

  1. Sprinkle the cooked bacon and shredded cheddar cheese over the top.
  2. Bake for an additional 5–7 minutes, or until the cheese is melted and bubbly.
  3. Remove from the oven and sprinkle with fresh green onions.
