Low-Carb Bacon Cheeseburger Casserole

This Low-Carb Bacon Cheeseburger Casserole is a comforting, keto-friendly dish that combines all the flavors of a classic cheeseburger without the bun! Juicy ground beef, crispy bacon, melted cheese, and a creamy egg-based topping make this casserole a crowd-pleaser for weeknight dinners or meal prep.


Ingredients:

  • 1 lb (450g) ground beef
  • 6 slices of bacon, cooked and crumbled
  • 1 medium onion, finely diced
  • 2 cloves garlic, minced
  • 1 teaspoon smoked paprika
  • 1 teaspoon mustard powder
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 4 large eggs
  • 1/2 cup heavy cream
  • 1/2 cup shredded cheddar cheese
  • 1/2 cup shredded mozzarella cheese
  • 1/4 cup mayonnaise
  • 2 tablespoons ketchup (low-sugar for keto)

Optional Toppings:

  • Sliced pickles
  • Chopped lettuce and tomato
  • Additional cheese

Instructions:

  1. Preheat the Oven: Preheat your oven to 375°F (190°C). Grease a 9×9-inch baking dish or equivalent.
  2. Cook the Beef Mixture: In a skillet over medium heat, cook the ground beef until browned. Drain any excess fat. Add the diced onion and garlic, cooking until softened, about 3 minutes. Stir in smoked paprika, mustard powder, salt, and pepper. Transfer the beef mixture to the prepared baking dish.
  3. Add Bacon: Sprinkle the cooked and crumbled bacon evenly over the beef mixture.
  4. Make the Egg Mixture: In a bowl, whisk together the eggs, heavy cream, mayonnaise, ketchup, and half of the shredded cheeses (cheddar and mozzarella). Pour the egg mixture evenly over the beef and bacon.
  5. Top with Cheese: Sprinkle the remaining shredded cheese on top.
  6. Bake: Bake for 20-25 minutes, or until the casserole is set and the cheese is bubbly and golden.
  7. Serve: Let the casserole rest for 5 minutes before slicing. Serve as-is or garnish with sliced pickles, chopped lettuce, or diced tomatoes for a cheeseburger-inspired twist.
