Magic Lemon Cobbler

Magic lemon cobbler is a sweet and tangy dessert with a fluffy, cake-like topping and a luscious lemon filling. The “magic” happens as it bakes—the batter rises to the top while the lemon filling settles into a creamy layer. Perfect for citrus lovers and so easy to make!


Ingredients

  • 1/2 cup unsalted butter, melted
  • 1 cup all-purpose flour
  • 1 cup granulated sugar
  • 2 tsp baking powder
  • 1/4 tsp salt
  • 3/4 cup milk
  • 1 tsp vanilla extract
  • 1 (21 oz) can lemon pie filling
  • Powdered sugar (optional, for garnish)

Instructions

  1. Preheat Oven: Preheat your oven to 350°F (175°C). Pour the melted butter into the bottom of a 9×13-inch baking dish.
  2. Prepare the Batter: In a mixing bowl, whisk together the flour, granulated sugar, baking powder, and salt. Gradually add the milk and vanilla extract, stirring until smooth.
  3. Layer the Cobbler: Pour the batter over the melted butter in the baking dish. Do not stir. Spoon the lemon pie filling evenly over the batter. Again, do not stir—the layers will shift during baking.
  4. Bake: Place the dish in the oven and bake for 40-45 minutes, or until the top is golden brown and the edges are bubbling.
  5. Cool and Serve: Let the cobbler cool slightly. Dust with powdered sugar if desired, and serve warm on its own or with a scoop of vanilla ice cream.

Tips for the Perfect Lemon Cobbler

  • Fresh Lemon Flavor: Add 1 tsp of lemon zest to the batter for extra citrusy brightness.
  • Use Homemade Filling: Substitute the canned filling with homemade lemon curd for a richer flavor.
  • Add Berries: Sprinkle fresh blueberries or raspberries over the lemon filling for a fruity twist.
  • Reheat Gently: Warm leftovers in the oven at 300°F for 10-15 minutes to maintain texture.
