Marinated Cucumbers, Onions, and Tomatoes

This refreshing salad features crisp cucumbers, sweet onions, and juicy tomatoes, all marinated in a tangy vinaigrette. It’s an easy-to-make side dish that’s perfect for summer barbecues, picnics, or simply as a light accompaniment to any meal. The vibrant medley is not only delicious but also packed with nutrients, making it a healthy addition to your diet.

Ingredients:

  • 2 cucumbers, thinly sliced
  • 1 medium onion, thinly sliced (red or white)
  • 2 medium tomatoes, chopped
  • 1/4 cup of apple cider vinegar
  • 1/4 cup of olive oil
  • 1 tablespoon of sugar (optional)
  • 1 teaspoon of salt
  • 1/2 teaspoon of black pepper
  • 1 teaspoon of dried oregano or Italian seasoning
  • Fresh parsley or dill for garnish (optional)

Instructions:

  1. Prepare the Vegetables: Slice the cucumbers and onions thinly. Chop the tomatoes into bite-sized pieces.
  2. Make the Marinade: In a medium bowl, whisk together the apple cider vinegar, olive oil, sugar (if using), salt, pepper, and oregano until well combined.
  3. Combine: In a large bowl, combine the sliced cucumbers, onions, and chopped tomatoes. Pour the marinade over the vegetables and gently toss to coat.
  4. Marinate: Cover the bowl with plastic wrap or a lid and refrigerate for at least 30 minutes, allowing the flavors to blend. For best results, let it marinate for a few hours.
  5. Serve: Before serving, give the salad a stir and garnish with fresh parsley or dill if desired.
