Whether you’re cooking for your partner, your family, or just yourself — one spoonful of this soup and you’ll understand how it got its name. It’s quick to prepare, yet feels like a labor of love. Serve it with crusty bread or a fresh salad and watch it become a new favorite comfort food.

  • 2 tablespoons olive oil
  • 1 small yellow onion, diced
  • 3 garlic cloves, minced
  • 1 teaspoon crushed red pepper flakes (optional, for heat)
  • ½ cup sun-dried tomatoes (in oil), chopped
  • 6 cups chicken broth
  • 2 cups cooked shredded chicken (rotisserie works great)
  • 1 teaspoon dried oregano
  • 1 teaspoon Italian seasoning
  • 1 teaspoon salt (adjust to taste)
  • ½ teaspoon ground black pepper
  • 1 cup heavy cream
  • ½ cup grated Parmesan cheese
  • 2 cups baby spinach
  • 1 tablespoon cornstarch mixed with 2 tablespoons water (optional, for thicker soup)
  • Fresh basil or parsley, for garnish

1. Sauté Aromatics

In a large pot or Dutch oven, heat olive oil over medium heat. Add diced onion and cook until soft, about 4–5 minutes. Stir in minced garlic, red pepper flakes, and chopped sun-dried tomatoes. Cook for another 1–2 minutes until fragrant.

2. Add Broth and Seasoning

Pour in the chicken broth. Stir in shredded chicken, oregano, Italian seasoning, salt, and black pepper. Bring the mixture to a simmer.

3. Make It Creamy

Lower the heat and stir in the heavy cream and grated Parmesan. Simmer for 10 minutes to allow flavors to meld. If you want a thicker consistency, stir in the cornstarch slurry and simmer for an additional 2–3 minutes.

4. Add Greens

Stir in baby spinach and cook until wilted, about 1–2 minutes.

5. Finish and Serve

Taste and adjust seasoning if needed. Ladle soup into bowls and garnish with fresh basil or parsley and extra Parmesan. Serve hot.

To make it even heartier, add ½ cup of small pasta (like ditalini) or ¾ cup of cooked white rice to the soup before serving. It transforms this into a full, stick-to-your-ribs dinner.
