Marshmallow-Surprise Hot Cocoa Cookies

These Marshmallow-Surprise Hot Cocoa Cookies are soft, chewy, and bursting with rich chocolate flavor, featuring a gooey marshmallow center! Perfect for winter nights, holiday gatherings, or whenever you need a cozy treat.


Ingredients (Makes 18-20 Cookies)

For the Cookies:

  • 113g (½ cup) unsalted butter, softened
  • 100g (½ cup) brown sugar, packed
  • 50g (¼ cup) granulated sugar
  • 1 large egg
  • 1 tsp vanilla extract
  • 125g (1 cup) all-purpose flour
  • 30g (¼ cup) unsweetened cocoa powder
  • ½ tsp baking soda
  • ¼ tsp salt
  • 100g (½ cup) chocolate chips or chunks

For the Marshmallow Surprise:

  • 10 large marshmallows, cut in half

Optional Toppings:

  • Grated chocolate or chocolate syrup
  • Mini marshmallows
  • Crushed candy canes (for a festive touch!)

Instructions

Step 1: Prepare the Cookie Dough

  1. In a large bowl, beat butter, brown sugar, and granulated sugar until light and fluffy.
  2. Mix in egg and vanilla extract until smooth.

Step 2: Add Dry Ingredients

  1. In a separate bowl, whisk together flour, cocoa powder, baking soda, and salt.
  2. Gradually mix the dry ingredients into the wet mixture.
  3. Fold in chocolate chips.

Step 3: Chill & Bake

  1. Cover the dough and chill for 30 minutes (this enhances flavor and texture).
  2. Preheat oven to 175°C (350°F).
  3. Line a baking sheet with parchment paper.
  4. Scoop 1.5 tbsp-sized dough balls and place 2 inches apart on the sheet.
  5. Bake for 8 minutes.

Step 4: Add the Marshmallow Surprise

  1. Remove cookies from the oven and quickly press a marshmallow half into the center of each.
  2. Return to the oven and bake for 2 more minutes, until the marshmallow puffs slightly.

Step 5: Cool & Serve

  1. Let cookies cool on the baking sheet for 5 minutes, then transfer to a wire rack.
  2. Drizzle with chocolate syrup or grated chocolate for extra indulgence!
