Ingredients (Serves 6-8)

  • Rice (white or glutinous rice) – 200 g (1 cup)
  • Milk (whole or coconut milk for a dairy-free version) – 500 ml (2 cups)
  • Sugar – 50 g (¼ cup)

  • Vanilla extract – 1 tsp
  • Salt – ¼ tsp (to enhance sweetness)

Step-by-Step Instructions

Step 1: Prepare the Rice

  1. Rinse the rice under running water until the water runs clear. This removes excess starch and prevents a gummy texture.
  2. Soak the rice in water for 2-3 hours (or overnight for best results). This softens the grains for a smoother texture.
  3. Drain the soaked rice completely.

Step 2: Blend the Ingredients

  1. In a blender, add the soaked rice, milk, and sugar. Blend until completely smooth.
  2. If using vanilla extract, cinnamon, or salt, add them now and blend again.

Step 3: Steam the Rice Cake

  1. Grease a heatproof cake pan or shallow dish with a bit of oil or butter.
  2. Pour the blended mixture into the pan and smooth the top.
  3. Set up a steamer and bring the water to a boil.
  4. Place the pan in the steamer, cover with a lid, and steam for 40-50 minutes on medium heat.
  5. The rice cake is done when it is firm to the touch and a toothpick inserted comes out clean.
