  • 1-2 tablespoons cold water (as needed)

For the Chocolate Ganache Filling:

  • 150g (¾ cup) dark chocolate (at least 55% cocoa), chopped
  • 120ml (½ cup) heavy cream
  • 1 tablespoon butter (for extra shine and smoothness)
  • 1 teaspoon vanilla extract
  • A pinch of salt

For Decoration (Optional):

  • Chopped nuts (almonds, pistachios, hazelnuts)
  • Fresh berries (strawberries, raspberries)
  • Whipped cream
  • Sea salt flakes
  • Edible gold flakes or sprinkles

Instructions

Step 1: Make the Tart Shells

  1. Mix Dry Ingredients – In a bowl, whisk together flour, powdered sugar, and salt.
  2. Incorporate Butter – Add cold butter cubes and rub them into the flour with your fingers or use a pastry cutter until the mixture looks like coarse breadcrumbs.
  3. Bind the Dough – Add egg yolk (or milk), vanilla extract, and 1 tbsp cold water. Mix until the dough comes together. If it’s too dry, add another tablespoon of water.
  4. Chill the Dough – Shape the dough into a disc, wrap in plastic, and chill for 30 minutes.

  1. Heat heavy cream in a saucepan until it starts to simmer (do not boil).

  3. Stir gently until the chocolate melts completely.
  4. Add butter, vanilla extract, and a pinch of salt, mixing until smooth.

  1. Spoon or pipe the chocolate ganache into the cooled tart shells.
  2. Let them set at room temperature for 1 hour or refrigerate for 30 minutes for a firmer texture.
