With a graham cracker crust, a smooth and velvety cheesecake filling, and that signature crispy sugar crust, these mini desserts deliver everything you love about crème brûlée and cheesecake in every bite!


Ingredients (Makes 12 mini cheesecakes)

For the Crust:

  • Graham cracker crumbs – 150g (1 ½ cups)
  • Granulated sugar – 50g (¼ cup)
  • Unsalted butter, melted – 75g (⅓ cup)
  • Salt – ¼ teaspoon

For the Cheesecake Filling:

  • Cream cheese, softened – 225g (8 oz)
  • Granulated sugar – 100g (½ cup)
  • Vanilla extract – 1 ½ teaspoons
  • Sour cream – 120g (½ cup)
  • Large eggs – 2
  • Heavy cream – 120ml (½ cup)

For the Crème Brûlée Topping:

  • Granulated sugar – 60g (¼ cup)

Instructions

1. Prepare the Crust

  1. Preheat oven to 175°C (350°F). Line a muffin tin with 12 cupcake liners.
  2. In a bowl, combine graham cracker crumbs, sugar, melted butter, and salt. Stir until the mixture is evenly coated and resembles wet sand.
  3. Spoon about 1 tablespoon of the crust mixture into the bottom of each cupcake liner. Press down firmly to pack the crust.
  4. Bake for 8–10 minutes or until the crust is lightly golden. Let it cool completely while you prepare the cheesecake filling.

2. Make the Cheesecake Filling

  1. In a large mixing bowl, beat the cream cheese until smooth and creamy.
  2. Add the sugar and beat until well combined, scraping down the sides of the bowl.
  3. Add the vanilla extract, sour cream, and eggs, beating after each addition until smooth.
  4. Pour in the heavy cream and mix until just combined.
  5. Spoon the cheesecake filling evenly over the cooled graham cracker crusts in the cupcake liners. Fill each liner almost to the top, leaving a little space for the sugar topping.
  6. Bake for 20–25 minutes until the edges are set, but the centers are still slightly jiggly. Let them cool at room temperature for 10–15 minutes, then refrigerate for at least 4 hours or overnight.

3. Prepare the Crème Brûlée Topping

  1. After the cheesecakes have chilled, sprinkle 1 teaspoon of granulated sugar over the top of each cheesecake.
  2. Using a kitchen torch, carefully caramelize the sugar until it forms a crispy, golden-brown crust. If you don’t have a torch, you can place them under a broiler for 2-3 minutes, but keep a close eye on them to avoid burning the sugar.

4. Serve & Enjoy

  1. Let the caramelized sugar cool and harden for a minute or two before serving.
  2. Serve immediately, or refrigerate until ready to serve. These mini cheesecakes are the perfect balance of creamy, crunchy, and sweet!
