✔️ Simple Ingredients – Made with common pantry staples that deliver big flavor.
✔️ Rich & Creamy Cheesecake – The velvety cheesecake layer is a treat in every bite.

Ingredients

For the Crust:

  • 160g (1 ½ cups) graham cracker crumbs – A classic crust that’s slightly sweet and crunchy.
  • 56g (¼ cup) unsalted butter, melted – To bind the crumbs together and add richness.
  • 2 tbsp brown sugar – Adds a little extra sweetness to the crust.

For the Cheesecake Filling:

  • 225g (8 oz) cream cheese, softened – The creamy base for the cheesecake.
  • 75g (⅓ cup) granulated sugar – For sweetness.
  • 2 large eggs – To help set the cheesecake filling.
  • 1 tsp vanilla extract – Adds flavor depth.
  • 120ml (½ cup) sour cream – For added creaminess and tang.

For the Pineapple Topping:

  • 1 can (400g) pineapple rings in juice, drained – Fresh pineapple works well too.
  • 60g (¼ cup) unsalted butter – For caramelizing the pineapple.
  • 60g (¼ cup) brown sugar – Adds sweetness to the pineapple topping.
  • 1 tsp vanilla extract – To enhance the flavor.
  • Maraschino cherries (optional) – For garnish and extra color.

Instructions

Step 1: Prepare the Crust

  1. Preheat the oven to 175°C (350°F).
  2. In a medium bowl, mix graham cracker crumbs, melted butter, and brown sugar until well combined.
  3. Press the mixture into the bottom of 12 muffin tins, lined with paper liners. Press down firmly to create a compact crust.
  4. Bake for 8-10 minutes, or until golden. Let cool completely while you prepare the cheesecake filling.

Step 2: Make the Cheesecake Filling

  1. In a large mixing bowl, beat the cream cheese until smooth.
  2. Add sugar, eggs, vanilla extract, and sour cream. Beat until fully combined and creamy.
  3. Pour the cheesecake mixture evenly over the cooled graham cracker crust in each muffin tin.
  4. Bake for 15-18 minutes, or until the edges are set and the center is just slightly jiggly. Let the cheesecakes cool to room temperature, then refrigerate for at least 2 hours, or until fully chilled.

Step 3: Make the Pineapple Topping

  1. In a skillet, melt the butter over medium heat.
  2. Add the pineapple rings and brown sugar. Cook for about 3-4 minutes, stirring gently, until the pineapple is golden and caramelized.
  3. Stir in the vanilla extract and remove from heat. Let the pineapple cool slightly.
  4. Once the cheesecakes are chilled, top each one with a caramelized pineapple ring and a maraschino cherry (optional) for garnish.

Step 4: Serve & Enjoy

  1. Carefully remove the mini cheesecakes from the muffin tin and place them on a serving platter.
  2. Serve chilled and enjoy!

Expert Tips for the Perfect Mini Pineapple Upside-Down Cheesecakes

✔️ Use Fresh Pineapple for Extra Flavor – If you prefer fresh pineapple, just slice and cook it with the butter and sugar until caramelized.

✔️ Chill the Cheesecakes Fully – Allow the cheesecakes to cool completely at room temperature, then chill them for at least 2 hours in the fridge to set perfectly.

✔️ Customize the Toppings – If you prefer a different fruit topping, feel free to swap the pineapple with peach slices or berries!

✔️ Check the Cheesecake Consistency – The center should still jiggle slightly but not be runny when you remove the cheesecakes from the oven.

✔️ Make Ahead for Convenience – These mini cheesecakes can be made the day before serving. Just store them covered in the fridge!

Serving & Storage

???? How to Serve: Best served chilled for the most refreshing flavor. Serve with a sprig of mint or extra caramelized pineapple on top!

???? How to Store: Keep the mini cheesecakes covered in the fridge for up to 5 days.

???? Freezing Instructions: You can freeze the mini cheesecakes for up to 3 months. Thaw in the fridge overnight before serving.
