This Moist Granny Cake is an old-fashioned favorite, packed with pineapple, brown sugar, and a rich pecan topping. It’s moist, easy to make, and a true comfort dessert that everyone will love!
Ingredients
- 2 cups all-purpose flour
- 1 ½ cups granulated sugar
- 2 tsp baking soda
- ¼ tsp salt
- 2 large eggs
- 1 (20 oz) can crushed pineapple with juice
- 1 cup packed brown sugar
- 1 cup chopped pecans
Glaze:
- ½ cup unsalted butter
- ½ cup granulated sugar
- ½ cup evaporated milk
- 1 tsp vanilla extract

Instructions
- Prepare the Cake Batter:
- Preheat your oven to 350°F (175°C) and grease a 9×13-inch baking dish.
- In a large bowl, mix together flour, sugar, baking soda, and salt. Add eggs and the entire can of crushed pineapple (including juice). Stir until well combined.
- Pour the batter into the prepared baking dish.
- Add Toppings:
- Sprinkle the brown sugar and chopped pecans evenly over the top of the batter.
- Bake:
- Bake for 40–45 minutes, or until a toothpick inserted in the center comes out clean.
- Make the Glaze:
- While the cake is baking, combine butter, sugar, and evaporated milk in a saucepan. Bring to a boil over medium heat, stirring constantly, then remove from heat and stir in vanilla extract.
- Glaze the Cake:
- As soon as the cake comes out of the oven, pour the hot glaze evenly over the cake. Let it soak in as the cake cools.
- Serve:
- Slice and serve warm or at room temperature.
Notes
- For extra texture, add shredded coconut or raisins to the batter.
- Store leftovers covered in the refrigerator for up to 4 days. Warm slices in the microwave for 10–15 seconds before serving.
- Perfect with a scoop of vanilla ice cream or whipped cream on the side!
