Moist Granny Cake

This Moist Granny Cake is an old-fashioned favorite, packed with pineapple, brown sugar, and a rich pecan topping. It’s moist, easy to make, and a true comfort dessert that everyone will love!


Ingredients

  • 2 cups all-purpose flour
  • 1 ½ cups granulated sugar
  • 2 tsp baking soda
  • ¼ tsp salt
  • 2 large eggs
  • 1 (20 oz) can crushed pineapple with juice
  • 1 cup packed brown sugar
  • 1 cup chopped pecans

Glaze:

  • ½ cup unsalted butter
  • ½ cup granulated sugar
  • ½ cup evaporated milk
  • 1 tsp vanilla extract

Instructions

  1. Prepare the Cake Batter:
    • Preheat your oven to 350°F (175°C) and grease a 9×13-inch baking dish.
    • In a large bowl, mix together flour, sugar, baking soda, and salt. Add eggs and the entire can of crushed pineapple (including juice). Stir until well combined.
    • Pour the batter into the prepared baking dish.
  2. Add Toppings:
    • Sprinkle the brown sugar and chopped pecans evenly over the top of the batter.
  3. Bake:
    • Bake for 40–45 minutes, or until a toothpick inserted in the center comes out clean.
  4. Make the Glaze:
    • While the cake is baking, combine butter, sugar, and evaporated milk in a saucepan. Bring to a boil over medium heat, stirring constantly, then remove from heat and stir in vanilla extract.
  5. Glaze the Cake:
    • As soon as the cake comes out of the oven, pour the hot glaze evenly over the cake. Let it soak in as the cake cools.
  6. Serve:
    • Slice and serve warm or at room temperature.

Notes

  • For extra texture, add shredded coconut or raisins to the batter.
  • Store leftovers covered in the refrigerator for up to 4 days. Warm slices in the microwave for 10–15 seconds before serving.
  • Perfect with a scoop of vanilla ice cream or whipped cream on the side!
