With simple pantry ingredients and an easy dough, you can recreate the flavors of a classic soft pretzel with a surprise cheesy twist. Pair them with a side of marinara, mustard, or garlic butter for the ultimate snack experience!


Ingredients (in Grams)

For the Pretzel Dough:

  • 500g all-purpose flour
  • 7g instant yeast (1 packet)
  • 1 teaspoon salt
  • 1 tablespoon sugar
  • 250ml warm water (about 40°C/105°F)
  • 30g unsalted butter, melted

For the Mozzarella Filling:

  • 200g mozzarella cheese, cut into 10 equal sticks

For the Baking Soda Bath:

  • 1.5 liters water
  • 50g baking soda

For the Topping:

  • 1 egg yolk + 1 tablespoon water (for egg wash)
  • Coarse sea salt, to taste
  • 50g melted butter (for brushing after baking)

Instructions

Step 1: Prepare the Pretzel Dough

  1. In a large bowl, combine flour, yeast, salt, and sugar.
  2. Add warm water and melted butter, mixing until a dough forms.
  3. Knead the dough on a floured surface for 5-7 minutes, until smooth and elastic.
  4. Place the dough in a lightly greased bowl, cover with a kitchen towel, and let it rise for 1 hour, or until doubled in size.

Step 2: Shape & Stuff the Pretzels

  1. Preheat oven to 200°C (400°F) and line a baking sheet with parchment paper.
  2. Divide the dough into 10 equal portions.
  3. Roll each portion into a long rope (about 25cm/10 inches).
  4. Flatten the rope slightly, place a mozzarella stick in the center, and carefully wrap the dough around it, sealing the edges tightly.
  5. Shape each stuffed rope into a pretzel shape or a simple twist.

Step 3: Boil in Baking Soda Bath

  1. Bring 1.5 liters of water to a boil, then add baking soda (it will bubble, so add slowly!).
  2. Using a slotted spoon, dip each pretzel into the water for 20-30 seconds.
  3. Remove and place on the prepared baking sheet.

Step 4: Bake to Perfection

  1. Brush each pretzel with egg wash and sprinkle with coarse salt.
  2. Bake for 15-18 minutes, until golden brown.
  3. Brush immediately with melted butter for extra flavor.

  1. Let the pretzels cool for 5 minutes before serving.
