Mushroom-Spinach Scrambled Eggs

Mushroom-Spinach Scrambled Eggs are a simple yet elegant breakfast classic that combines earthy mushrooms and vibrant spinach with creamy scrambled eggs. This dish is perfect for busy mornings when you want something quick but satisfying, packed with vitamins, minerals, and protein.

The mushrooms add a savory depth while spinach brings a fresh, slightly sweet note and a boost of nutrients like iron and fiber. This recipe is easily adaptable — add cheese, herbs, or your favorite spices to customize it your way.


???? Ingredients (U.S. Standard Measurements)

  • 4 large eggs
  • 1 cup fresh spinach, roughly chopped
  • 1 cup mushrooms, sliced (button, cremini, or your choice)
  • 2 tablespoons butter or olive oil
  • 2 tablespoons milk (optional, for creamier eggs)
  • Salt and pepper, to taste
  • Optional: 1/4 cup shredded cheese (cheddar, mozzarella, or feta)
  • Optional: fresh herbs like chives or parsley for garnish

???? Instructions

1. Sauté Mushrooms and Spinach

In a non-stick skillet, heat butter or olive oil over medium heat. Add sliced mushrooms and sauté for about 5 minutes until soft and browned.

Add chopped spinach and cook for another 1-2 minutes until wilted. Remove from skillet and set aside.

2. Prepare Eggs

In a bowl, whisk eggs with milk (if using), salt, and pepper until well combined.

3. Cook Eggs

Return skillet to medium-low heat and pour in egg mixture. Let it sit undisturbed for a few seconds, then gently stir with a spatula, folding the eggs from edges to center.

4. Add Veggies and Cheese

When eggs are about halfway cooked, add the sautéed mushrooms and spinach. Continue cooking and gently stirring until eggs are softly set but still moist.

If using cheese, sprinkle it on top and let it melt before removing from heat.

5. Serve

Transfer to plates and garnish with fresh herbs if desired.
