  • 1 tbsp adobo sauce (from canned chipotles, optional)
  • 1 liter beef broth
  • 1/2 cup water

For the Tacos

  • 12 small corn tortillas
  • 200g shredded Oaxaca cheese (or mozzarella)
  • 1/2 cup chopped fresh cilantro
  • 1/2 cup chopped white onion
  • Lime wedges, for serving

Instructions

Step 1: Prepare the Birria Sauce

  1. In a dry skillet over medium heat, toast the dried guajillo, ancho, and chipotle chilies for 30 seconds per side until fragrant.
